Zucchini Tots: 1 c. zucchini, grated egg + ¼ c. of an onion, diced + ¼ c. sharp cheddar cheese, grated + ¼ cup breadcrumbs + salt and pepper (+ 2 tbs fresh parsley). Bake at 400 degrees in a greased muffin tin for 15 - 18 minutes.
