Bacon Wrapped Smokies with Brown Sugar and Butter: 1 pound Bacon; 1 pound Smokies; 1 stick Butter; 2 cups Brown Sugar -- Preheat oven to 375F. Cut the bacon into thirds & wrap each smokie. Stir melted butter & 1 cup of brown sugar until mixed well & pour over the smokies and bacon. Then take the other cup of brown sugar and sprinkle evenly over the smokies. Bake them for about 15-20 minutes and then turn the heat up to 400F for about 5 minutes or longer until the bacon becomes crispy.

Bacon, egg, and toast cups Ingredients: 6 slices of bacon 6 slices of bread Shredded cheese 6 eggs Salt and pepper Directions: Preheat the oven to 400° F. Grease 6 wells of a muffin pan with butter. In a frying pan, cook bacon about 3-5 minutes, until partially cooked but not completely crispy. Transfer to a paper towel-lined plate. Cut out rounds of bread (I used a 3.5-inch round cookie cutter, but a drinking glass would be fine.) Press the bread rounds into the greased muffin wells. Curl a piece of bacon around the periphery of each piece of bread, positioning it between the bread and the muffin tin to help keep it in position. Sprinkle a small amount of shredded cheese in the center of each piece of bread. One at a time, crack an egg, removing about half of the white, and dropping the remaining white and yolk over each piece of bread, being careful not to break the yolks. Once all the bread pieces have been topped with eggs, bake until eggs are cooked through to your liking (about 6-10 minutes) and bacon is crispy. Run a knife around the edge of each muffin well and pop the egg cups out. Season with salt and pepper to taste and serve immediately

Strawberry cheesecake: strawberries, 8 oz. cream cheese, 3 tbsp icing sugar, 1 tsp vanilla extract, graham cracker crumbs
Strawberry cheesecake bites Cheesecake Stuffed Strawberries: 1 pound large strawberries 8oz. block cream cheese – soft 3 – 4 tablespoons powdered sugar (depends on how sweet you want the filling) 1 teaspoon vanilla extract (or use almond, lemon, etc. ) Graham cracker crumbs Instructions: Rinse strawberries and cut around the top of the strawberry. Remove the top and clean out inside with a paring knife if necessary. I found most of the strawberries already had a nice hollow center so that step was not necessary. If you want to stand your strawberries upright (like in the picture) slice a bit off the bottom. One strawberries are prepped set aside. Combine cream cheese, powdered sugar and vanilla with a mixer or by hand. Add cream cheese mix to piping bag and fill strawberries. Once strawberries are filled dip the top in graham cracker crumbs. Devour and fall in love.

meringue cupcakes with raspberry curd 6 egg whites, room temperature 1 tsp white vinegar 1 tsp vanilla 1/2 tsp salt 1 3/4 c (350 g) sugar Raspberry curd (recipe follows) Sweetened whipped cream or ice cream and fresh fruit for serving, if desired. Preheat oven to 225F (110C). Line every other cup of 2 nonstick 12-cup muffin tins with baking cups and coat each with cooking spray. Prepare a large piping bag with a coupler (no tip needed) and set aside. In a large bowl, beat egg whites, vinegar, vanilla, and salt until frothy. Increase the speed and begin adding sugar slowly, a tablespoon at a time, beating for one minute after each addition so the sugar dissolves. Continue whipping until stiff, glossy peaks form. Transfer mixture to a pastry bag fitted with a plain coupler (no tip), and pipe into prepared baking cups, about 2 inches above rims, finishing with a peak in the centers. Bake, rotating halfway through, 3 to 3 hours and 20 minutes. (Cupcakes should be completely dry on the outside but still soft in the middle. A toothpick inserted horizontally at base of top should have moist but cooked crumbs attached.) Transfer cupcakes in baking cups to wire racks; let cool completely. To serve, carefully cut off caps with a serrated knife and fill with whipped cream, ice cream, raspberry curd, fresh fruit or any other filling you desire. Raspberry Curd via Martha Stewart This is an incredibly easy recipe. It makes much more than you will need though, so I would advise you to halve it and save half the container of raspberries for topping the finished cupcakes. 1 container (6 oz or 170 g) raspberries 1 1/4 c (250 g) sugar 4 egg yolks 1 stick (8 Tbls or 115 g) unsalted butter 1/4 c (60 ml) fresh lemon juice Pinch of salt Whisk all ingredients in a heatproof bowl set over a pan of simmering water until slightly thick, 8 to 10 minutes. Strain; press a sheet of plastic wrap directly onto the surface of the curd and refrigerate until cold and thick.

Honey Lime Tilapia, warning this is the ultimate food porn site! 286 Michael and I talk all the time about how being married and eating together has changed the foods we eat. For instance, I didn’t eat much in the way of potatoes, hardly ever bought red meat, and had NEVER cooked steak of any kind before we were married. Now, potatoes find their way into our menu once every week or two and one of my favorite meals we’ve discovered together is a sort of steak stir-fry. Michael, on the other hand, never really ever ate fish. Not that he didn’t like fish, he just never really ate it. Now, he really likes tilapia and shrimp (he can’t get enough of our cajun fish sandwiches and shrimp po’boys). Because I love fish so much, and I’m always looking to expand our seafood recipe repertoire, I hunted down this REALLY easy method for cooking tilapia. After eating this for dinner, Michael said it was the best fish he’d ever eaten. Woo hoo! Now, I know it looks like fried fish. It isn’t. In fact, all the ingredients required for this dish are pretty healthy and straightforward. I even used whole wheat pastry flour for dredging the fish! Also, I found that it was a great balance of flavor and not too sweet. I loved the combination of lime and honey. One of the beauties of fish is that it cooks very quickly. With only a little bit of preparation beforehand, this meal comes together in about 10 minutes. Seriously. You did read that right. 10 minutos, dear reader. I tried an experiment with the recipe, which originally called for marinating the fish about an hour ahead of time. I wondered if it would work to marinate it longer than that, so we cooked half the fish one night after about an hour of marinating time, and waited 24 hours to cook up the rest for dinner the next night. I couldn’t tell any difference in texture, and the flavor was, if anything, better. Because of that, you could easily mix up the marinade, pour it in a zip-top bag with the fish fillets and keep it in your freezer until you’re ready to eat it. You just pull it out of the freezer, pop it into the refrigerator for the day, and by dinner time, all you have to do is dredge it and cook it up. Easy-peasy! As for what to serve it with, we tried it with a simple squeeze of lime juice, and it was delicious. Or, you could certainly serve it with some peach salsa. I loved it! 5.0 from 13 reviews Honey Lime Tilapia Print Serves: 4 Ingredients For the fish and marinade: 4 (4-5oz) tilapia fillets (thawed if frozen) Juice and zest of 1 lime 1 Tbsp olive oil 1½ Tbsp honey ½ tsp salt ½ tsp pepper ¼ tsp garlic powder For dredging and cooking: ½c flour (I tried both white flour and whole wheat pastry flour with good results) ¼ tsp salt ¼ tsp pepper 1-2 Tbsp olive oil Instructions Assemble marinade by combining lime zest, lime juice, olive oil, honey, salt, pepper, and garlic powder in a gallon-sized zip-top bag or shallow container with a lid. Add fish and marinate in the refrigerator anywhere from 1 hour up to 24 hours*. When ready to cook, combine flour with salt and pepper on a plate. Remove each fish fillet from the marinade and dredge lightly with the flour on both sides (just a light, light coating). Heat 1-2 Tbsp olive oil in a medium skillet over medium-high heat until shimmering. Cook fillets 2 at a time for 3-4 minutes per side or until opaque and browned (this works best if you don’t disturb the fish much while letting it cook). Serve with lime wedges or peach salsa. Notes *If you want to plan this meal in advance, you can prepare the fish and marinade in a large freezer bag and keep it in the freezer. Move frozen fish and marinade to the refrigerator the morning you plan to serve the fish and allow it to thaw in the refrigerator. It will marinate while it thaws!
