I have to admit the excitement around the no-knead bread 'revolution' passed me by without the slightest inclination on my part to give it a go. But it has been a slow burn (I blame it on early life failure with Elizabeth David's English Bread and Yeast Cooking tome). NOW my interest is piqued. Since even Bangkok Carrefour does a pretty decent sourdough, I'm thinking it can't be that hard, can it? Jim Lahey's THE man who started it all. I have muchos cast iron crocks which are de riguer for his no-knead bread so I'm going to give it a go. Maybe next week. I think.
