Ingredients 3 cups cooked shredded chicken (I like rotisserie) 6 ounces cream cheese, softened 1/3 cup sour cream 1/2 cup salsa 1 + 1/2 cups shredded sharp cheddar cheese 1 + 1/2 cups chopped baby spinach, stems removed coarse salt and fresh black pepper, to taste 9 - 10 (6-inch) flour tortillas vegetable or canola oil, for frying sour cream/quacamole/salsa/taco sauce/ranch dressing Instructions 1. In a large bowl mix together the chicken, cream cheese, sour cream, salsa, cheddar and spinach. Season to taste with salt and pepper. 2. Working with one tortilla at a time add 2 heaping tablespoons of the chicken mixture off center and spread out like a log. Roll up and set seam side down on a platter. Repeat until all the tortillas are filled and rolled. 3. Add enough oil to a large skillet to generously cover the bottom. Heat on medium to medium-low heat, cook tortillas in batches, turning to brown each side. Remove to paper towels to drain. 4. Serve with your choice of dunking sauce.

This is THE meat that you want to stuff in your tacos, burritos and salads. Outstanding! My Kitchen Escapades: Pork Carnitas The end result however is out of this world. The meat is completely melt-in-your-mouth, while the caramelization on the outside multiplies that amazing flavors. We have a hard time not eating it all before we get the chance to stick some in a tortilla :) Pork Carnitas (recipe adapted from Cooks Illustrated) 4 pound boneless pork butt, fat trimmed and cut into 2 inch cubes 1 1/2 tsp salt 3/4 tsp pepper 1 tsp ground cumin 1 onion, peeled and halved 2 bay leaves 1 tsp dried oregano 2 Tb fresh lime juice 2 C water 1 medium orange, juiced and keep the spent halves 1. Adjust oven rack to lower middle position and heat to 300 degrees. Combine all the ingredients in a large Dutch oven, including the spent orange halves and juice. Bring the mixture to a simmer over medium-high heat, uncovered. Once it simmers, cover pot and transfer it to the oven. Cook until the meat falls apart when prodded with a fork, about 2 hours. 2. Remove the pot from the oven and turn on the broiler. Use a slotted spoon to remove the meat from the pan and place it on a large foil-lined jelly roll pan. Remove and discard everything from the pot except for the cooking liquid. Place pot over high heat on the stove and boil until thick and syrupy, about 20 minutes. You should have about 1 C of liquid remaining when it is finished. 3. While the liquid is reducing, use two forks to pull each cube of pork into three equal sized pieces. Once the liquid has become a syrup, gently fold in the pieces of pork into the pot. Try not to break up the pork any further. Taste and add additional salt and pepper. 4. Spread the pork back onto the foil lined pan and evenly spread the meat around so there is a single layer of meat. Place the jelly roll pan on the lower middle rack of the oven and broil until the top of the meat is well browned and edges are slightly crisp, about 5 to 8 minutes. Using a wide metal spatula, flip the pieces of meat and broil the other side until well browned and edges are slightly crisp, 5 to 8 minutes. Serve immediately in a tortilla with all your favorite toppings.

Rustic Roasted Tomato Salsa 2 fresh jalapeno peppers 2 garlic cloves, unpeeled 1/2 cup finely chopped white onion 1 15-ounce can diced fire-roasted tomatoes with garlic, in juice 1/2 cup (loosely packed) roughly chopped cilantro 1 lime, juiced Salt and Pepper Heat a small skillet over medium heat, and dry roast the peppers and garlic, until soft and blotchy in spots. The peppers will take about 10 minutes, and the garlic will take about fifteen. Meanwhile, rinse the onion in a fine-mesh strainer under cold water. Shake to dry, and set aside. Stem and peel the jalapenos, and scrape out the seeds and membranes (or leave them if you want the salsa extra spicy)! Peel the garlic, and transfer it to a food processor, along with the jalapenos. Pulse until they are finely chopped, then add the tomatoes (with their juice), and pulse a few more times to make the salsa as smooth or as coarse as you want. Pour the mixture into a medium bowl, and add the onion, cilantro, and lime juice. Stir to combine, and add salt and pepper to taste. Cover and refrigerate, or serve immediately.
