Sesame tahini cake, baath (Goan Coconut Cake) Cake yields: one 9 inch cake ingredients 1 stick (4 ounces) unsalted butter, softened to room temperature + a little more for greasing a 9 inch circular pan 1 1/2 cups brown sugar (if you like it sweeter, you can go up to 2 cups) 1 tablespoon tahini 4 large eggs 1 teaspoon madagascar bourbon vanilla extract 1 tablespoon coconut flavored rum (optional) 1/4 cup rose water 3 cups (1 lb + 1 2/4 ounces) semolina 1 cup (2 3/4 ounces) shredded unsweetened coconut (I used the Bob's Red Mill brand, I was really pleased with its scent and taste) 1/4 teaspoon kosher sea salt 1 teaspoon baking powder 2 cups reduced fat coconut milk 1/4 cup black sesame seeds 1. Line the base of springform or regular circular 9 inch cake pan with parchment paper. Lightly grease the sides with butter and keep aside until ready to use. 2. Place the butter and sugar in the bowl of a stand mixer and using the paddle attachment cream until light and fluffy on medium high speed for about 5 minutes. Add the tahini and beat for another minute until combined. 3. Add one egg at a time to the creamed butter and sugar mixture and mix on medium-high speed until completely combined. 4. Add the vanilla extract and coconut rum (if using). Beat for 30 seconds until completely mixed. 5. In a large mixing bowl, lightly whisk, the semolina, coconut, salt, baking powder and 1 1/2 tablespoons of the black sesame seeds. Pour half of this mixture into the creamed butter-sugar-egg mixture and combine using the paddle attachment. Pour in the rose water and coconut milk. Add the rest of the semolina mixture and combine on medium speed until smooth. Pour the batter into the prepared cake pan and smooth the surface with an offset spatula (wet the spatula with a little cold water, to prevent the batter from sticking). Sprinkle the rest of the sesame seeds on the surface of the cake batter. Cover the cake with cling film and refrigerate for at least 4 hours to overnight before baking. 6. To bake the cake, place a wire rack in the center of the oven and preheat to 350F. Remove the cling film and bake for 45-50 minutes turning the cake half way through baking. The cake is done with the top is slightly golden and the center is firm to touch or when a knife or skewer when passed through the center of the cake comes out clean from the center. Remove the cake from the oven and allow it to cool for 30 minutes in the cake pan. Run a knife around the edges of the baked cake, remove and allow to cool to room temperature before serving. To store, I recommend refrigerating in an airtight container or freezing the extra (bring to room temperature before serving).

Ingredients 1 pint of cherry or grape tomatoes, cut in halves 8 oz or ½ lb of mozzarella pearls or ciliegine ½ cup of basil garlic oil sauce , adjust to taste 4 avocados Lettuce or salad greens to serve with the avocados - optional 4 - 6 tablespoons of balsamic vinegar reduction sauce to drizzle, adjust to taste Salt and pepper to taste Instructions For the tomato caprese filling: Place the tomatoes, mozzarella pearls or ciliegine in a bowl with the basil oil, mix well. Can be used immediately or refrigerated until ready to assemble the avocados. For the caprese stuffed avocados: Cut the avocadoes in half lengthwise, remove pits and carefully peel the avocado halves. Place the peel avocado halves on a plate, can place over lettuce or salad greens. Spoon the tomato mozzarella caprese filling into the avocado halves. Drizzle with the balsamic vinegar reduction and serve immediately. OR This is my new favorite way to eat Caprese salad. You'll love the creamy mozzarella and cherry tomatoes atop ripe avocado. Recipe adapted from Laylita's Recipes. Ingredients Basil garlic olive oil 2 cups packed basil leaves ½ cup olive oil 2 to 3 garlic cloves Salt and pepper to taste Caprese salad 1 pint red or yellow (or both) cherry tomatoes, cut in halves 1 (8-oz) package fresh mozzarella pearls ¼ to ½ cup basil garlic olive oil 4 avocados 4 to 6 T balsamic glaze Instructions Basil garlic olive oil Place basil, olive oil and garlic in a food processor or blender and process until smooth. Add salt and pepper to taste. Refrigerate leftovers. Let sit at room temperature 10 to 15 minutes before serving. Caprese salad Place the tomatoes and mozzarella pearls in a small bowl and toss to coat. Use immediately or refrigerate. If refrigerated, remove from refrigerator 10 to 15 minutes before serving. Cut avocados in half lengthwise. Remove pits and carefully peel. Place peeled avocado halves on serving plate. Spoon Caprese filling into avocado halves. drizzle with balsamic glaze and serve immediately. Notes Feel free to set avocados atop salad greens for prettier presentation. I was too lazy to do so. Lemon Cupcakes with Fresh Raspberry Curd Filling and Lemon Buttercream Frosting source: adapted from Annie’s Eats Ingredients: For the raspberry curd: 8 tbsp unsalted butter 1 pint ripe raspberries or 1 12-oz. package frozen raspberries, thawed 5 large egg yolks, lightly beaten 3/4 cup sugar Pinch of salt 2-3 tsp fresh lemon juice For the lemon cupcakes: 2 1/3 cups cake flour 2 3/4 tsp baking powder 1/4 tsp salt 5 large egg whites, at room temperature 1/4 tsp cream of tartar 1 1/2 cups sugar 2 tbsp finely grated lemon zest 12 tbsp unsalted butter, at room temperature 1 cup whole milk For the lemon buttercream frosting: 16 tbsp unsalted butter, at room temperature 2 tbsp finely grated lemon zest 3 cups confectioners’ sugar, sifted 2 tbsp heavy cream 1 tbsp fresh lemon juice Fresh raspberries for garnish Ingredients: To make the raspberry curd: Melt the butter in a large saucepan over medium heat. Add the raspberries, egg yolks, sugar and salt, and cook, mashing the berries. Stir frequently at first and then constantly at the end, until thickened, about 10 minutes. Pour the mixture through a coarse strainer set over a bowl, pressing hard on the solids to extract as much liquid as possible. Cool to room temperature; the curd will continue to thicken as it cools. Stir in lemon juice to taste. Cover and refrigerate until ready to serve. The curd can be made 2-3 days in advance. To make the cupcakes: Position a rack in the middle of the oven and preheat the oven to 350 degrees F. Line two 24-cup cupcake pans with cupcake liners. Whisk together the flour, baking powder, and salt in a bowl; set aside. In the clean, dry bowl of an electric mixer fitted with the whisk attachment, beat the egg whites on medium speed until foamy. Add the cream of tartar and increase the speed to medium-high. Beat just until stiff peaks form when the whisk is lifted. Transfer the egg whites to a separate bowl (not plastic), clean and dry the mixer bowl and reattach it with the paddle attachment. Add the butter to the mixer bowl and beat on medium speed until smooth. Gradually add the sugar and beat until incorporated. Mix in the lemon zest. Beat the mixture on medium-high speed until light and fluffy. Beat in 1/4 cup of the milk until just blended. Reduce the speed to low and add the flour mixture alternately with the remaining milk in three batches, beginning and ending with the flour; scrape down the sides of the bowl as necessary. Beat until just blended. Using a rubber spatula, fold one quarter of the egg whites into the batter, being careful not to deflate the mixture. Once incorporated, add in the rest of the whites (including any liquid that may have accumulated on the bottom of the bowl) and gently fold in until well combined; no white should remain. Using a large cookie/ice cream scoop, divide the batter between the cupcake liners, filling each liner about 2/3 full. Bake until golden and a toothpick inserted in the center comes out clean, about 18-22 minutes, turning the pans around halfway through the baking time. Cool the cupcakes in the pan on a wire rack for 5 minutes then remove them from the pans and cool completely on a wire rack. Allow the cupcakes to cool completely. To make the frosting: In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and zest on medium speed until light and fluffy. Gradually add the sugar and beat until smooth. Add the heavy cream and lemon juice and beat for one minute longer; the frosting should be light and fluffy. Once the cupcakes have cooled, hollow out the center of each cupcake using the cone method and spoon about 1 tsp of raspberry curd in to each hollowed-out cupcake. The filling should be just shy of the top of the cupcake. Frost as desired, taking care not to push the curd out of the cupcake with the weight of the frosting. Garnish with raspberries. Serve and store at room temperature, though the frosting will soften significantly at temperatures above 75 degrees F.
