Never Boil Corn on the Cob    Throw it in the oven at 350 for 25-30 minutes. Leave the husk on  it will trap in the moisture  leaving you with juicy  tender corn. The husk and silk will peel away easily once it's cooked. Cut off the large end and it slides right out with no silk..

Mexican Sour Cream Rice-this is awesome!  We loved it and it wasn't too spicy for the kids.  Great Mexican side dish!  1 cup uncooked long grain white rice  1 (14 ounce) can chicken broth  1 cup sour cream  1 (4 ounce) can diced green chile peppers  2 cups shredded pepper Jack cheese, divided  1 1/2 cups frozen corn  1/4 cup finely chopped fresh cilantro  salt and ground black pepper to taste
