Duchess Bakery ginger cookies // Sadly, I found this recipe pretty disappointing! The cookies are made with oil instead of butter and I feel like that really makes a big difference in the flavour. The chunks of candied ginger aren't super appealing in the middle of the cookie either.

How to Make Baklava Cooking Lessons from The Kitchn // So, I messed with this recipe a lot, but I think it's super adaptable. I ended up halving it but used about the original amount of nuts. I also added some extra butter (from brushing the phyllo) into the syrup mixture to make it a little caramel-y. I also added a teensy bit of orange blossom water to the syrup.My friends said it was the best baklava they've had! It's pretty hard to mess up and I think you could do all sorts of variations.

Aretha Frankenstein's Waffles of Insane Greatness // These waffles really are dreamy! The corn starch lends to a fluffy inside and lightly crisp outside. Although the recipe says it serves 2-4, I don't think it would reasonably serve any more than 2. Will definitely make this again!

Recipe: Best-Ever Veggie Burger // These just might live up to the name! There is a fair amount of effort involved (cooking brown rice, roasting beets, etc), but it is totally worth it! These burgers have a fantastic umami flavour and taste especially good topped with aged white cheddar and pickle slices. I ended up with at least 10 good-sized, filling burgers, so I froze about half and they freeze and reheat great. Would definitely recommend making these!

Thai Slaw // A funner take on a potluck/bbq coleslaw, the Thai flavors in this one make it more interesting and refreshing! I added some thin sliced mango for extra goodness.

It tastes deliciously fresh and is filling enough to eat as a meal. I added a generous teaspoon of honey and some extra spices (smoked chili pepper, cumin) to the dressing and I think that made it extra delightful!

Spicy Bean and Sweet Potato Burritos with avocado and salsa // This is one of the easiest, cheapest and tastiest vegetarian meals out there! I've mixed these up a lot sometimes adding rice, corn, or making guacamole and they always turn out wonderful.

bee sting cake // Made this the other day and it turned out lovely! The yeasted cake batter tastes different than the standard kind but I loved it! The taste is similar to eating a fresh bun with honey butter but much more decadent. The pastry cream and almond crunch take it over the top! A perfect cake for those who don't like their desserts too sweet.

Baked herb and pistachio falafel // I followed this recipe quite closely save for the mint, which I didn't have on hand and used the parsley instead of cilantro. These are fresh, filling and the taste is great! Not to mention they are quick (less than 30 min) cheap and easy to make. I like to serve them in whole wheat pitas with tsatziki, lettuce, feta and cucumbers.They're a real favourite in our house!

Jim Lahey's Sullivan St. Bread // This recipe is fantastic! It takes some time but very little effort to make and you're rewarded with a beautiful loaf or artisan bread! I love to make it for guests when I'm serving soup.

Black bean and butternut soup // We loved this soup! It's simple to make and filling for a vegetarian dish. I ended up using a sweet potato and added more broth as it seemed to be lacking. I also added some frozen corn in the last few minutes of cooking and topped it with avocado, cheese and plain greek yogurt. Yuuum.

Mom's Apple Cake by Smitten Kitchen // Made this last night and loved it! It's perfectly moist and fluffy with lovely bits of apple dispersed throughout. I used granny smith apples, skipped the walnut and 3/4'd the recipe for a smaller crowd. I wish I had made more though because we all wanted extra afterwards! I will be making this one again.

Almond, Chicken and Sweet Potato Soup // It sounds pretty different but yields an incredible Thai-like flavour with kicks of ginger and lime. The ingredient list is small and it takes very little time and effort to bring this soup together! It's easy, cheap, healthy and delicious so it has become a real standby in our house. I like to add some sriracha and a dash of soy sauce for added flavour.

Pumpkin Sage Pasta // This was good but wasn't as flavourful as I'd hoped. I ended up adding parmesan to kick it up a notch.

essential raised waffles // These were a waffle game-changer for me. This recipe creates waffles that are crispy on the outside and light and fluffy on the inside. And the flavor can't be beat! The batter does have to sit overnight but overall they don't require much effort.

Mango slaw with cashews and mint // Seriously good flavour combination here. I'd definitely make this again!

Dijon braised Brussels sprouts // These are hands down the best Brussels I've ever had. The dijon mustard adds the best kick! Instead of white wine I substitute beef or vegetable stock.

cauliflower fritters with feta, yogurt, pomegranate // Didn't try the topping with this but the fritters are very simple to make and they turn out wonderfully. Would make this again.
