Avgolemono Soup{Greek Lemon Chicken Soup} // Super creamy and decadent! I've never tried the egg-thickening technique before, but it was really simple and worked well. The lemon juice and dill really brighten up this otherwise creamy soup. I skipped the crockpot step and just poached my chicken in the soup while the orzo was boiling.

Rome on the Range Soup Recipe via @SparkPeople // This tastes AMAZING. I usually double the recipe so I can have as many leftovers as possible! The meatballs are a tad time consuming but you can make them ahead of time and freeze them.

Charred Eggplant and Coconut Curry Recipe via @SparkPeople // This is a staple for us - it's such a rich, delicious meal that you could hardly believe is actually vegan! (Although I usually sneak in some real cream to finish it off) It's a little time consuming but worth it, because it makes a lot! I make a batch every few weeks of so to save for lunches. Adding a little garam masala give this dish even more depth.

quiche lorraine by smitten kitchen. // This is my base quiche recipe that I play around with a lot. I typically use sauteed kale, caramelized onions and bacon in the filling and I find that it needs at least 6 eggs. So rich, savory and delicious!

Shaved Brussels Sprout Salad with Red Onion, Lemon and Pecorino Recipe on Food52, a recipe on Food52 // Beautiful salad that I quite liked until I added the pecorino cheese - in my opinion, it's actually much better without! Also depending on the size of your sprouts, this can be pretty labour intensive - even with a mandolin slicer.

momofuko's crack pie // Totally lived up to the hype and was pretty simple to make. So good because it's straight up butter and sugar and you just can't go wrong with that.

Jeni's splendid ice cream base // This was so good on it's own I almost didn't want to add anything to it! Incredible flavor. It's super good with fresh raspberries! It takes a little longer to get soft right out of the freezer but other than that it's perfect.

Creamy Chicken and Corn Chowder // Pretty well followed this recipe to a tee and it turned out great! Really well balanced flavours at play here with the cream, hot peppers, bacon and onions. Would definitely make again.

Mexican Chicken Soup---- Ina Garten // This was fabulous! Great soup for the warmer months. I changed it a little adding more seasoning (chipotle paprika, chili powder and a dash of brown sugar), and also about 1 cup of frozen corn. I think the fresh cilantro is necessary!

Homemade Naan - Once Upon a Chef // The best homemade naan we've made yet! I did skip the anise, however, and subbed it for crushed up fenugreek seeds which I think I much preferred the flavour of. These turn out wonderfully pillowy and delicious - especially if you brush them with melted butter liberally :) // bt

Duchess Bakery ginger cookies // Sadly, I found this recipe pretty disappointing! The cookies are made with oil instead of butter and I feel like that really makes a big difference in the flavour. The chunks of candied ginger aren't super appealing in the middle of the cookie either.

Charred Eggplant and Coconut Curry Recipe // This recipe is favourite - we eat this a lot. It's super filling, with complex flavour that we can't get enough of. It's hard to believe that it's vegan, it's so creamy and delicious! Although truth be told I usually sneak a little butter and cream into the recipe. Amazing with naan, freezes like a dream. This one's a winner.

How to Make Baklava Cooking Lessons from The Kitchn // So, I messed with this recipe a lot, but I think it's super adaptable. I ended up halving it but used about the original amount of nuts. I also added some extra butter (from brushing the phyllo) into the syrup mixture to make it a little caramel-y. I also added a teensy bit of orange blossom water to the syrup. My friends said it was the best baklava they've had! It's pretty hard to mess up and I think you could do all sorts of variations.

Aretha Frankenstein's Waffles of Insane Greatness // These waffles really are dreamy! The corn starch lends to a fluffy inside and lightly crisp outside. Although the recipe says it serves 2-4, I don't think it would reasonably serve any more than 2. Will definitely make this again!

Recipe: Best-Ever Veggie Burger // These just might live up to the name! There is a fair amount of effort involved (cooking brown rice, roasting beets, etc), but it is totally worth it! These burgers have a fantastic umami flavour and taste especially good topped with aged white cheddar and pickle slices. I ended up with at least 10 good-sized, filling burgers, so I froze about half and they freeze and reheat great. Would definitely recommend making these!

bee sting cake // Made this the other day and it turned out lovely! The yeasted cake batter tastes different than the standard kind but I loved it! The taste is similar to eating a fresh bun with honey butter but much more decadent. The pastry cream and almond crunch take it over the top! A perfect cake for those who don't like their desserts too sweet.

Baked herb and pistachio falafel // I followed this recipe quite closely save for the mint, which I didn't have on hand and used the parsley instead of cilantro. These are fresh, filling and the taste is great! Not to mention they are quick (less than 30 min) cheap and easy to make. I like to serve them in whole wheat pitas with tsatziki, lettuce, feta and cucumbers. They're a real favourite in our house!
