This grilled ginger-sesame chicken chopped salad is easy, incredibly flavorful and all the textures in this salad are amazing–the crunch, the chew, the tenderness and the unique bite from the sesame seeds. I love that it is healthy too! The best part of this salad is the marinated and grilled chicken. I enjoyed it so much that I will likely just start making it all it’s own on occasion. It has the perfect blend of flavors and the marinade was quick and easy to throw together.

Grilled Pineapple Mahi Mahi Recipe - Cooking With Brett and Lena Coleman 4 medium pieces of Mahi Mahi; fresh or completely thawed if frozen 1 cup fresh pineapple juice, not from concentrate; we prefer Dole brand 1 cup fresh cut pineapple, quartered; we purchase ours pre-cut in our grocers produce dept. 1/2 cup fresh grade A clover honey 1/2 cup Worcestershire sauce 4 cloves garlic; finely minced 1 tsp onion powder 1/8 cup Irish whiskey; we prefer Jameson 1 Tbsp light brown sugar Directions: Place sliced pineapple & pineapple juice in blender or food processor & blend until smooth. Pour juice into large mixing bowl and add honey, Worcestershire sauce, garlic, onion powder, whiskey, & brown sugar. Whisk all ingredients into a marinade consistency. Place mahi mahi in large freezer bags, pour over marinade until fish is completely covered. Seal bags, rub all sides of fish through the bag and place in refrigerator until ready to use (We usually allow our foods to marinade overnight, so that the next day all we have to do is cook it). Cook mahi on a preheated grill until it begins to flake easily with a fork and is opaque all the way through, approx. 5-7 minutes each side depending on thickness. Top with a slice of fresh pineapple & serve with your favorite sides. We enjoy jasmine rice & asparagus with this particular dish.

I followed the recipe and substituted the seasoning because OLD BAY and my dad's seafood seasoning was on hand. The cod was simply, delicious. We made homemade fries and fresh steamed broccoli to complete the meal. My husband and toddler son ate it all up, so I will make this again soon!
