Lemon Blueberry Cake with Blueberry Cream This recipe will make 2 9x5 loaves. You can also make it in any other kind of baking pan you like. This bread freezes beautifully, so make two loaves and freeze one. 2 sticks butter, softened 2 2/3 cups, sugar, divided 4 cups all-purpose flour 4 teaspoons baking powder 1 teaspoon salt 4 large eggs 1 cup milk 3 cups blueberries 1/2 cup fresh lemon juice Preheat the oven to 350 degrees. Grease and flour 2 9x5 loaf pans. In a large bowl with mixer beat butter and 2 cups of the sugar on medium/high speed until light and fluffy, about 5 minutes. Meanwhile, in a medium bowl, combine the flour, baking powder and salt. With mixer speed on low, add eggs, one at a time, beating after each addition until well blended and scraping bowl down occasionally. Alternately add flour mixture and milk, mixing just until blended. Gently stir in the blueberries. Spoon batter into loaf pans. Bake loaves 1 hour and 5 minutes (much less if baking in a mini bundt cake pan) or until toothpick inserted in center just comes out clean. Do not overbake loaves. Cool loaves in pans on wire rack 10 minutes and then remove from pans. With skewer, prick top and sides of warm cake. In a small bowl, mix lemon juice and 2/3 cup sugar. With pastry brush, brush top and sides of warm cake with the lemon glaze. Cool cakes on wire rack. For Blueberry Cream: 1 cup of whipping cream 1/2 cup blueberries 2 tablespoons confectioner's sugar (or regular sugar) to taste Whip cream and sugar together, adding sugar and tasting until desired sweetness is reached. Add the blueberries and whip just a little, until the blueberries and just crushed and the whipped cream turns blue.

Blackberry Pie Bars ( i'm going to use a different berry) It's my turn again for Project Pastry Queen. I flipped through the book and chose these bars immediately. I had actually made them two years ago, but adapted them to be Raspberry Pie Bars. I remember loving them, but sadly I never blogged them. I've been wanting to make them ever since, but just hadn't gotten around to it... what with all the other decadent, delicious recipes I've been making from The Pastry Queen. While these are called "pie" bars, I don't really think they were like pie. To me, it was more like a double-crusted crumble, but that's okay too. They were still super yummy - buttery pastry, sweet filling, crumbly topping. They are a cinch to throw together, and are a great way to use up frozen berries - you know, to make room for more berries in your freezer this summer. While I was tempted to recreate the raspberry bars from before, I stuck with blackberries this time. I added a little lemon zest and almond extract to the filling, and I think it brightened up the flavor nicely. I served these as a simple dessert with vanilla ice cream when we had friends over for dinner, and I've eaten one every day since. As much as I liked them warm and fresh from the oven, they are equally delicious straight from the fridge. Blackberry Pie Bars adapted from Rebecca Rather, The Pastry Queen Crust and Topping •3 cups all-purpose flour •1 1/2 cups sugar •1/4 tsp salt •1 1/2 cups (3 sticks) unsalted butter, chilled Fruit Filling •4 large eggs •2 cups sugar •1 cup sour cream •3/4 cup flour •pinch salt •zest of 1/2 lemon •1 tsp almond extract •2 (16-oz) packages frozen blackberries, thawed and drained To make the crust and topping, preheat the oven to 350 degrees. Grease a 9x13 inch baking pan. Combine the flour, sugar, and salt in the bowl of a food processor. Pulse a few times to mix. Cut the butter into 1/2-inch cubes, and add to the flour mixture. Process until the butter is evenly distributed but the mixture is still crumbly, 30-60 seconds. Reserve 1 1/2 cups of the mixture to use as the topping. Press the remaining mixture into the bottom of the pan, and bake 12-15 minutes. Cool for at least 10 minutes. To make the filling, whisk the eggs in a large bowl, then add the sugar, sour cream, flour, salt, lemon zest, and almond extract. Gently fold in the berries and spoon the mixture over the crust. Sprinkle the remaining flour mixture evenly over the filling, and bake 45 to 55 minutes. Cool at least 1 hour before cutting into bars, or scoop out of the pan to serve cobbler-style

Preheat oven to 400 degrees. 1 cup whole milk (or, you can use something like 2/3 cup of 2 percent milk and 1/3 cup half-and-half, mixed together) 1/2 cup unsalted butter 1 and 1/2 tsp. vanilla extract 1/8 tsp. almond extract 2 large eggs 2 cups All Purpose flour 3/4 cup granulated sugar 2 and 1/2 tsp. baking powder 1/2 tsp. salt 1 cup fresh ripe strawberries chopped into very small pieces (the redder and sweeter, the better!) 4 oz. full-fat cream cheese, very soft 1 and 1/2 Tbsp. of liquid from one whole egg thats been beaten lightly 1/3 cup granulated sugar 1/4 tsp. vanilla extract Put paper liners in the cups of your muffin pan, or use nonstick baking spray very liberally. Cut up your berries and set them aside. In a small bowl, mix together with a spoon the cream cheese, 1/3 cup sugar, the 1 and 1/2 Tbsp. beaten egg, and 1/4 tsp. vanilla extract. Mix until almost all the lumps are gone. Set this aside, but dont chill it. Melt the butter slowly in a sauce pan on low heat. Add the vanilla extract, almond extract, and the milk into the butter, stirring to combine. Cool until the mixture is just warm, then whisk in the eggs. Thoroughly combine with a whisk, in a large mixing bowl, the flour, sugar, baking powder, and salt. Make a well in the center of the dry ingredients. Pour all of the butter, milk, and egg mixture into the dry ingredients, blending just until combined. Dont overmix. Its okay if a few little flour streaks are still evident. Using a portion scoop or spoon, fill each muffin cup barely half full. Scatter a few pieces of strawberry on top of each one. Using a small spoon, dab a generous teaspoonful or so of the cream cheese mixture on top of the berries. On top of that, add on another tablespoon or two of the muffin batter. On top of that, add a few more pieces of strawberry. Push them in just slightly. If theyre well visible at this point, theyll still be visible after the muffins have baked (and they wont melt away and disappear)! Sprinkle the tops of the unbaked muffins very generously with coarse sugar for a nice sparkle. Bake the muffins for about 15 to 18 minutes, until theyre light golden on top and a toothpick inserted in the center comes out mostly clean. The middle of the cupcake should be kind of firm when lightly pressed with a finger. Check on the muffins early, and if theyre browning too fast, lightly cover the pan with a sheet of foil. Let the muffins cool in the pan, on a rack, for a couple of minutes, then carefully remove them from the pan to cool the rest of the way on the rack.
