Avocado Chicken Salad - 2 or 3 shredded cooked chicken breasts, 1 avocado, ¼ of an onion, juice of ½ a lime, 2 T cilantro, salt and pepper. Mix & eat. Sounds simple and avoids mayo!

Iced Mint Tea--a dear friend made this and it was refreshing and even a little mojito-like (but no alcohol). Mmmm.

The Cookin' Canuck's shrimp salad with quinoa, avocado and lemony dressing... looks simple and delicious

Spinach and Artichoke Chicken Casserole--think I'll be making this with some adaptations. Looks like a much lighter casserole.

spinach and ricotta lasagna rolls--a faster take on lasagna, but definitely tasty! I used whole grain lasagna noodles for added fiber, and sauteed a bit of minced garlic and a chopped yellow bell pepper, wilted the spinach down, and mixed that in with the cheeses. The pepper and garlic give even more flavor. Really great!

Chicken Broccoli Casserole. I made a healthier version of this, though it would probably be decadent as-is. Ask if you want the variation I did.

Cuban style black beans. My in-laws love traveling to Cuba and swear by these, so I'll be testing them out soon!

Cilantro Thai Grilled Chicken (serves 4) Simple--marinade made in the food processor and marinates 15 min. (or more time if you have it). Delicious.

Copycat Nature Valley Granola Bars.. a friend says they are a pretty good match, so I had to try.

Chowhound's chile-cilantro hashbrowns in the waffle maker. Making this tonight!

The Pioneer Woman's chicken tortilla soup. Easy and delicious.

Eva Longoria's Guacamole (via Martha). So so good!

David Lebovitz's chocolate macarons are good. His descriptions of how to make macarons are awesome, too.

Billy's Vanilla, Vanilla Cupcakes (thanks, Martha Stewart). The buttercream is so good!

"Can't Beet Red Velvet Cupcakes" Sorta labor-intensive, but worth it to avoid red food coloring! And the roux frosting is ridiculously good.

Martha Stewart's macaroni and cheese is the best out there. I added some onions and sauteed them in the roux for more flavor.

Ina Garten's Engagement Roast Chicken. Try it with cara cara oranges and a belgian beer instead of the lemon/white wine combo.

Bacon and Kale Strata. A seriously good recipe you can assemble the night before and bake the next morning. Rich and impressive, yet easy

Farmgirl's toasted almond chocolate chip biscotti. Excellent with chocolate drizzled over the top and dipped in coffee

My favorite vegetarian lasagna. So flavorful, you don't even miss the meat.
