Or For the quinoa, we make two cups and add green onions, fresh garlic, caramelized red onions, tomatos, and fresh lemon and lime juice tossed in a bit of olive oil and melted butter - there's a bit of chopping involved, it lasts all week long as a side dish!! You can also add avocados, cilantro, corn, beans
Quinao corn salad~ Only with a LOT of tweaking did I love this. Added more citrus (orange juice) and garlic garni (this was a little bland for me without it). Also, sauteed the corn and scallions in the dressing. Next time I would switch out the butter for olive oil. Overall though, quinao is a tasty grain!

Bring quinoa and broth to boil in a 2-quart saucepan; reduce heat. Cover and simmer 20-25 minutes or until broth is absorbed. While quinoa is cooking, melt butter in a large skillet over medium-high heat. Cook garlic in butter for about one minute, stirring frequently, until golden. Stir in vegetables. Cook about 3-5 minutes, stirring frequently, until vegetables are crisp-tender. Stir cream cheese and basil into cooked quinoa. Toss vegetables with quinoa mixture and sprinkle with cheese.

Let's Dish If you've never tried quinoa, you really should. I'm always looking for new quinoa recipes, and this is one of my favorites. Technically, quinoa is not a grain, but it does remind me of cous cous. The great thing about quinoa, as opposed to other grains, is that it's very high in protein. It's also gluten-free. You can use any kind of vegetables in this dish. I like onion, broccoli, cauliflower and carrots, and I'll add peppers sometimes too. I just give all the veggies a coarse shop in my food processor, but you could even throw in a mix of frozen veggies to save time. Although I'd typically serve this as a side dish, I'll happily eat it as a meal on it's own.
creamy Quinoa Primavera - Pinner says: this was VERY GOOD!! It made a lot, so I was surprised when we ate it all. Even my kids loved it. Great way to get them to eat a healthy dish. I served it with Roasted chicken and green salad. It did take a little bit of time to chop all the vegies, but it was so worth it. I will make this again and again.

Cover and chill overnight. Right before serving, add avocados and mix gently.

BACON WRAPPED CHICKEN WITH CREAM CHEESE FILLING ~12 boneless skinless chicken breasts halves ~2 (8 oz) cartons chive & onion cream cheese ~salt (to taste) PREHEAT oven to 400F. FLATTEN chicken between 2 sheets of wax paper with a mallet to ½” thickness. SPREAD 3 Tbsp of cream cheese over each breast. Season with salt. WRAP with bacon & stick a toothpick through breast to hold it together. BAKE uncovered for 35-40 min (juices run clear). BROIL 6" below heat source for 5 min till bacon is crispy.

Crock Pot Ribs! Another pinner said: These are really good alternative when a grill is not available. Fall off the bone. I cooked on low for 8 hours, instead of dumping the bbq sauce in the crock pot over the ribs, I brushed to bbq sauce on before cooking, and added 1/4 cup water to the bottom of the crockpot. I would also use a crock pot liner when cooking these. Pretty good recipe, I will make them again!
Easy Barbecued Ribs/ Yummy stuff! I usually don't like crock pot ribs but, the extra steps you do in this recipe makes a huge difference. I still prefer them cooked in the oven or on a grill (I like to eat the meat off the bone, the meat kind of falls off these once) but they were really good and I would make them again to change things up a bit.
