Mixed leaf & snipped herb salad | Karen Martini - put salt, garlic, shallots & mustard in bowl, make a paste with back of a spoon. Add lemon juice, vinegar, sugar, stir. Add oil & black pepper, stir, set aside. Combine chilled leaves (rocket, iceberg, witlof), herbs (parsley, dill, chives) and celery in bowl, add dressing. Toss with forked fingers, being careful not to squash the leaves. Tip the dressed salad onto flat platter. Add peas and/or avocado chunks, if using.
