Chipotle Corn Chowder; SO YUMMY! Stewart said he would eat this soup any time I make it (and he normally hates soups). it is very hearty and easy to leave out the chicken if you want a veg option. we ate it with blue corn chips, which was a perfect paring
One Pan Sour Cream Chicken Enchilada Skillet. Next time: do not add anymore water or juices when cutting the chicken. And sautee mushrooms and bell peppers separate then add in with cheese. Also possibly add some green onions for garnish!
