Poor Man's Prime Rib ~ Eye of round roast cooked briefly at a high temperature, then left in a warm but turned-off oven for several hours.
Poor Man's Prime Rib:"This is seriously the best way to cook a roast. It makes an inexpensive piece of meat taste like prime rib 1 (3 pound) beef eye of round roast salt and pepper to taste Preheat the oven to 500 degrees F (260 degrees C). Season the roast with salt and pepper and place in a roasting pan or baking dish. Do not cover or add water. Place the roast in the preheated oven. Reduce the temperature to 475 degrees F (245 degrees C). Roast for 21 minutes (seven minutes per pound) then turn off the oven and let the roast sit in the hot oven for 2 1/2 hours. Do not open the door at all during this time! Remove the roast from the oven, the internal temperature should have reached at least 145 degrees F Carve into thin slices to serve.

Ive always wanted to try cooking prime rib
Perfectly Perfect Roasted Prime Rib of Beef Au Jus Serves 10 to 12 1 15 Lb. Prime Rib (About 5 Ribs) ½ Cup XVOO 2 Tablespoons Coarse Sea Salt 1 Tablespoon Coarse Ground Black Pepper (Butcher’s Grind) 1 Tablespoon Garlic Powder 1 Cup Good Red Wine 3 Cups Homemade Beef Demi-Glaze or Good Quality Beef Stock Preheat oven to 350 Degrees F (325 if using a convection oven). Place the Prime Rib in a shallow roasting pan. Pour the XVOO all over the meat, sprinkle with the salt and pepper and rub everything all over the meat including the sides of the roast. Roast the Prime Rib until the internal temperature registers 128 Degrees F for medium rare on an instant read thermometer when inserted in to the middle of the Roast (about 3 hours). Remove the roast from the oven, place the roast on a serving platter and let rest for 30 minutes before carving. In the mean time, pour off all of the fat left in the roasting pan and over high heat, de-glaze the pan with the red wine scraping up all of the bits on the bottom of the pan. Bring to a boil and reduce by half. Add the beef demi-glaze or stock to the pan and bring back to a boil. Reduce slightly (by about 1/3). Strain Au Jus and serve with Prime Rib. Serve Horseradish Creme Fraiche as an accompaniment. Horseradish Crème Fraiche Sauce My version of this classic sauce is on the “horseradish hot” side. You can easily tame it by using less horseradish and less Tabasco. Makes 3½ Cups 3 Cups Crème Fraiche or Sour Cream ¼ Cup Plus 2 Tablespoons Prepared Horseradish, Drained 1 Teaspoon Tabasco 1 Tablespoon Worcestershire Sauce 1 Teaspoon Coarse Sea Salt ½ Teaspoon Coarse Ground Black Pepper (Butcher’s Grind) Gently fold all ingredients together until well blended.

This is THE meat that you want to stuff in your tacos, burritos and salads. Outstanding! My Kitchen Escapades: Pork Carnitas The end result however is out of this world. The meat is completely melt-in-your-mouth, while the caramelization on the outside multiplies that amazing flavors. We have a hard time not eating it all before we get the chance to stick some in a tortilla :) Pork Carnitas (recipe adapted from Cooks Illustrated) 4 pound boneless pork butt, fat trimmed and cut into 2 inch cubes 1 1/2 tsp salt 3/4 tsp pepper 1 tsp ground cumin 1 onion, peeled and halved 2 bay leaves 1 tsp dried oregano 2 Tb fresh lime juice 2 C water 1 medium orange, juiced and keep the spent halves 1. Adjust oven rack to lower middle position and heat to 300 degrees. Combine all the ingredients in a large Dutch oven, including the spent orange halves and juice. Bring the mixture to a simmer over medium-high heat, uncovered. Once it simmers, cover pot and transfer it to the oven. Cook until the meat falls apart when prodded with a fork, about 2 hours. 2. Remove the pot from the oven and turn on the broiler. Use a slotted spoon to remove the meat from the pan and place it on a large foil-lined jelly roll pan. Remove and discard everything from the pot except for the cooking liquid. Place pot over high heat on the stove and boil until thick and syrupy, about 20 minutes. You should have about 1 C of liquid remaining when it is finished. 3. While the liquid is reducing, use two forks to pull each cube of pork into three equal sized pieces. Once the liquid has become a syrup, gently fold in the pieces of pork into the pot. Try not to break up the pork any further. Taste and add additional salt and pepper. 4. Spread the pork back onto the foil lined pan and evenly spread the meat around so there is a single layer of meat. Place the jelly roll pan on the lower middle rack of the oven and broil until the top of the meat is well browned and edges are slightly crisp, about 5 to 8 minutes. Using a wide metal spatula, flip the pieces of meat and broil the other side until well browned and edges are slightly crisp, 5 to 8 minutes. Serve immediately in a tortilla with all your favorite toppings.

Pork Carnitas (recipe adapted from Cooks Illustrated) 4 pound boneless pork butt, fat trimmed and cut into 2 inch cubes 1 1/2 tsp salt, 3/4 tsp pepper, 1 tsp ground cumin, 1 onion, peeled and halved, 2 bay leaves, 1 tsp dried oregano, 2 Tb fresh lime juice, 2 C water, 1 medium orange, use juice & spent halves. Need large dutch oven, broiler and foil & about 4hrs. I used crock pot then broiler.
Pork Carnitas (originally from Cook's Illustrated)...Highly recomended. I do not care for mexican food much and this seemed very strange to me but this was very good and smelled wonderful cooking. Could be easily adapted to crock pot and could be used many ways. Very happy to find this recipe to use a cheap cut of meat in a new way.
