Loaded Baked Potato Salad - Mix ½ cup softened butter, ½ cup sour cream, ½ cup shredded extra sharp cheddar, ¼ cup chopped chives, 8 strips thick cooked crumbled bacon. Fold mixture with 4 large cubed cooked potatoes. Salt and pepper to perfection and serve warm! Reserve some bacon or cheese for the topping. Summer Food

Last pinner said...I do this daily (: Perfectly cooked, shaped eggs - and you can bake a whole lot simultaneously: Just grab a muffin tin and and very lightly oil each spot in the tin with either butter or spray oil. Then crack an egg in each muffin area! Stick these in a 350 degree oven for about 15-20 minutes. Put on a English muffin, with shredded cheese. Can be frozen and reheated. Brilliant!

Ham and Cheese Sliders I know what you are thinking...ham and cheese sliders; does that really require a recipe? The answer is YES it does. These have so much flavor. Sure you have your classic ham and cheese sandwich as the base of the recipe but then you top it with a flavorful poppyseed sauce. The sauce is a combo of Worcestershire sauce, onion, mustard, and butter that makes these anything but ordinary. These can be made ahead for a party and are kid friendly because they are small and familiar. My son hates mustard but couldn't taste the little bit of mustard in the sauce. I don't know about you but sometimes I just want to cook something that I know my kids will eat without complaining about it. This definitely would qualify for a "No Cooking" Friday meal because it's so easy. I made these right after Easter and used my leftover ham...sorry I didn't post it sooner so you could use your leftover ham too! These are great as an appetizer or make it a meal. Ham and Cheese Sliders adapted slightly from the Recipe Club 24 good white dinner rolls 24 pieces good honey ham 24 small slices Swiss cheese 1/3 cup mayonnaise 1/3 cup miracle whip Poppy seed sauce (you probably could half this...I had plenty extra) 1 Tablespoon poppyseeds 1 1/2 Tablespoons yellow mustard 1/2 cup butter, melted 1 Tablespoon minced onion 1/2 teaspoon Worcestershire sauce In a small bowl, mix together mayonnaise and miracle whip. Spread onto both sides of the center of each roll. Place a slice of ham and a slice of Swiss inside of each roll. Close rolls and place them into a large baking dish or heavy cookie sheet. Place very close together. In a medium bowl, whisk together all of the poppy seed sauce ingredients. Pour evenly over all of the sandwiches. You do not have to use all of the sauce! Just use enough to cover the tops. Let sit 10 minutes or until butter sets slightly. Cover with foil and bake at 350 degrees for 12-15 minutes or until cheese is melted. Uncover and cook for 2 additional minutes or until tops are slightly brown and crispy. Serve warm. ** sandwiches can be assembled a day ahead and kept in the fridge ready to bake. Zucchini Cakes. Freshly shredded zucchini with Parmesan cheese, garlic and spices, pan fried until golden brown. These zucchini cakes make an elegant appetizer fit for those upcoming Oscar parties. Shredded fresh zucchini, is mixed with a little Parmesan, panko, paprika, garlic and a hint of ground nutmeg. The mixture is then pressed into patties and pan fried in olive oil until they are golden brown. Makes: 8 cakes You will need: 1 large zucchni grated, excess water removed (Note: To do this, after you grate the zucchini, put the grated zucchini into paper towels and squeeze to release the water) 1/2 cup freshly grated Parmesan cheese 1 cup panko bread crumbs sprinkle of ground nutmeg, about 1/8 teaspoon (Note: If you add too much it can quickly take over the taste, less is more) 1/4 teaspoon paprika 1 clove garlic, minced 1 egg salt and pepper to taste 1-2 tablespoons olive oil Combine all ingredients, except olive oil, in a bowl and mix thoroughly. Using a heaping tablespoon form the mixture into 8 patties. Heat olive oil in a pan over medium heat. Once heated, add patties and cook until golden brown. About 3-4 minutes per side. Serve. These are great when served with a dollop of ranch dressing. Enjoy!

Chili's Copycat Salsa Recipe: (Recipe from Deals to Meals) 2 cans (14.5 oz each) whole tomatoes, drained 1 small (4 oz) can diced or whole jalapenos (not pickled)--about 4-5 jalapenos (or less if you don't like a lot of spice) 1/4 c. yellow onion, cut into quarters (you can also use dried minced onion) 1 tsp. garlic salt 1/2 to 1 tsp. salt (depending on how much you prefer) 1 tsp. cumin 1/2 tsp. sugar 1 tsp. lime juice Place all of the ingredients together into a food processor or blender and puree until smooth.
