Remove sausage from casing and discard casing. Combine sausages in a large bowl. Roll into 1-inch balls brown in a skillet. Carefully remove balls from skillet and set aside. Drain grease, reserving crusty bits in skillet. Add sherry, sour cream, and chutney and cook over low heat, stirring constantly. Add balls back into skillet and cook until hot. CAJUN CRACK: I make this all of the time for parties. It's addicting!! 2 cans of corn, 1 can of hot rotel , 1 bag of shredded cheddar, 3/4 cup of Chives, 1 1/2 cups of sour cream, 1/2-2/3 cup of mayo Then mix it all together and add a ton of garlic powder and Tony's cajun seasoning refrigerate for 4 hours. It's best to let it refrigerate overnight. The dip tastes the best with fritos!
