It's fall and the best thing about fall, besides cozy sweaters, is comfort food. Soup is my ultimate comfort food. Make a large batch and freeze individual portions for lunches or emergency meals. I'll be testing out these recipes on the weekend.
One Pan Sour Cream Chicken Enchilada Skillet. Next time: do not add anymore water or juices when cutting the chicken. And sautee mushrooms and bell peppers separate then add in with cheese. Also possibly add some green onions for garnish!
