Note from author... Boudin: I have made this since I was a very little girl and we never had a sausage stuffer until I bought one as an adult. Add about 1 tab of Creole Seasoning. NOTE if your don't have a sausage stuffer take hair rollers med-large boil them to sanitize and wrap casing around and hand stuff them. Make sure your kitchen is cold when making homemade sausage.
