Made this a few months ago--so, so comforting and filling.  My husband liked it too even though it was vegetarian!  We topped with reduced fat cheese, a dollop of greek yogurt for some added protein and scooped it up with tortilla chips.  Yummy!  I recommend it for "Meatless Monday" meals to save money and calories.
