Gumbo - peel fresh raw shrimp & make a stock from the shrimp peels & veggies. Sauté onion, garlic,peppers& celery. Add browned sausage, chicken-simmer &add roux. Add seasoning (tabasco,red pepper, s & p,old bay, parsley,garlic salt, file' powder, etc). Add meat&simmer low for 3hrs. Add 1 bg. Okra&tomatoes& simmer 1 hour. I mix in a little rice & serve with rice on the side.
