Set it and forget it with this lightened version of Beef Stroganoff. So easy and yummy!! I used baby Portobello mushrooms which made for a nice flavor. I did have to tinker with the sauce thickening agent to get it to the consistency I wanted.
Roasted garlic and thyme beetroot. another way to do it is to place the sliced unpeeled beetroot in aluminium foil along with the smashed garlic bulb, rosemary instead of thyme, toss with olive oil, balsamic vinegar and seasoning, make a foil packet and roast 40 mins.
