Homemade Ginger Ale: 2 Tbs grated fresh ginger 1 cup sugar ½ cup water Juice of 1 lemon 1/8 tsp active dry yeast 8 cups water Bring to a boil: ginger, sugar & ½ cup water until sugar dissolves. Remove from heat & steep about 30 minutes. Strain with a fine sieve. Mix with lemon juice, yeast & 2 qts of water. Pour into plastic bottle w/screw cap. Important to use plastic- glass can crack from the gases. Ferment at room temp about 2 days. Refrigerate when it starts to carbonate.
