Chik Noodle Soup- bird free, but still packed with flavor. I used Trader Joe's vegan Chik strips for this, but Beyond Meat would work well too, or any other veggie brand of chicken-less strips you favor. Welcome fall!
Black Salsa- this is my take on the Top Secret Recipe guy's clone of Baja Fresh "Salsa Baja". Mine isn't nearly as black as the one at Baja Fresh but it's got a great, deep, smoky flavor. If you roast the tomatoes whole instead of cutting them in half like I did, you will likely get more char on the tomato skins, and a deeper color. If you also add less chopped tomatoes, you'll get a thinner consistency closer to the original. I just like my salsa chunky.
