Simply southern. Homemade Moon pies. I think the graham flour would be better then whole wheat. Make the marshmallow filling while the cookies are cooling. While the marshmallow is being mixed up it cools enough for you to filling the cookies right away. The 8 oz of chocolate is enough to cover 11 cookies but only 8 will look good and smooth.

Remove the mixture and set it aside. Add the chickpeas, parsley, cilantro, salt, chili powder, and cumin to the bowl of the food processor and pulse until they are roughly blended but not pureed. Return the onion mixture to the food processor, along with the baking powder and just enough flour so that when you pulse the processor, the mixture begins to form a small ball and is not sticky. (Note: Start by adding ¼ cup of flour, and then the remaining ¼ cup. You can add more if the mixture is still too wet.) Transfer the falafel mixture to a bowl, cover it with plastic wrap and refrigerate it for 1 hour. While the falafel mixture is chilling, prepare the tahini sauce by whisking together the yogurt, tahini and lemon juice. Season it with salt and pepper, cover it and place it in the fridge. Once the falafel mixture has chilled, use a small ice cream scoop or spoons to form the mixture into balls (roughly 3 Tablespoons per ball). (Note: You can also add additional flour at this point, if the mixture is too wet to scoop.) Set a large sauté pan over medium heat and add a liberal amount of canola oil so that the pan is well-coated. Let the pan pre-heat for 3 minutes then add the falafel one by one, browning them on the first side for 3 minutes, then flipping them once and browning the second side until the mixture is cooked throughout. Transfer the falafel to a paper towel-lined cooling wrack and immediately season them with salt. Repeat this process until you have cooked all of the falafel. Place three or four falafel inside a halved, warmed pita and drizzle with the prepared tahini sauce.

Baked Coconut Shrimp & Pineapple Dipping Sauce! Made the coconut shrimp quickly. Super tasty and my house smelled wonderful! I didn't make the pineapple sauce, but the recipe is easy to follow!
Baked Coconut Shrimp with Pineapple Jalapeno Dipping Sauce Ingredients 1 Tablespoon lime juice 2 teaspoons finely chopped fresh jalapeno pepper 1/2 cup pineapple preserves 1 pound uncooked large shrimp peeled and deveined 2 egg whites 2 Tablespoons cornstarch 2 cups sweetened flaked coconut Directions 1Combine lime juice, jalapeno pepper, and pineapple preserves in a small bowl and mix well. Cover and refrigerate until ready to serve. 2Preheat oven to 400 degrees and line a cookie sheet with parchment paper. 3In a small bowl beat egg whites with a hand mixer until soft peaks form. 4Place cornstarch and coconut on two separate plates. Hold shrimp by the tail and dip and coat the shrimp with cornstarch. Next, dip the shrimp in the egg whites and finally in the coconut coating well. 5Place shrimp on the cookie sheet and bake for 15-17 minutes or until coconut is a golden brown. Make sure to turn it once halfway through (around 8 minutes into cooking time) to make sure both sides brown. 6Serve with pineapple dipping sauce.

CHEDDAR PUFFS: 1 loaf Crusty French Bread, Cut Into 1-inch Cubes 1/2 stick Butter 3 cloves Garlic, Minced 1 whole Shallot, Minced 1-1/2 teaspoon Dijon Mustard 8 ounces, weight Cream Cheese, Sliced 1-1/2 cup Grated Cheddar Cheese Salt And Freshly Ground Black Pepper, To Taste 2 whole Egg Whites, Beaten Preparation Instructions Heat butter in a skillet over medium heat. Add garlic and shallots and saute for 1 minute. Add Dijon and stir to combine. Reduce heat to low. Add cream cheese and stir until melted. Add grated cheddar and stir until melted. Turn off heat. Add salt and pepper to taste. Fold in egg whites. Dunk bread cubes in cheese, coating thoroughly. Place on a nonstick baking mat or sheet of waxed paper and freeze for 20 minutes, uncovered. Remove frozen chunks from tray and place into a Ziploc bag. Store in the freezer. When ready to bake, preheat oven to 375 degrees. Place frozen cheese puffs on a baking sheet with a nonstick baking mat or parchment paper, and bake for 10 minutes or until golden brown. Serve immediately or at room temperature.
