S’mores Stuffed Chocolate Chip Cookies - inspired by Picky Palate --- I made my own graham crackers for these s’mores stuffed cookies, but you can certainly use store-bought crackers if you’re pressed for time or you know, not crazy like me. You’ll need 4 approximately 1 1/2″ by 3″ pieces which for store-bought graham crackers means half of a graham square. If you decide to make your own graham crackers (go for it!), cut them to fit. This recipe yields 4 gigantic cookies. Feel free to double the recipe and/or make smaller cookies by using smaller graham crackers and just half of a marshmallow for each cookie. … Ingredients: For the cookie dough (Thick and Chewy Chocolate Chip Cookies): 2 cups plus 2 tbsp all-purpose flour ; ½ tsp baking soda ; ½ tsp salt ; 12 tbsp unsalted butter, melted and cooled until warm ; 1 cup brown sugar, packed ; ½ cup granulated sugar ; 1 large egg plus 1 egg yolk ; 2 tsp vanilla extract ; 1 ½ cups semi-sweet chocolate chips …. For assembly: 1 cookie dough recipe, at room temperature ; 8 graham cracker squares, broken into halves (see header note above) ; 4 marshmallows, snipped in half lengthwise ; 1 full-size Hershey’s bar, divided between each of the prospective cookies ….. Instructions: To make the cookie dough: Whisk the flour, baking soda, and salt together in a medium bowl; set aside. In the bowl of a stand mixer fitted with the paddle attachment, or by hand, mix butter and sugars until thoroughly combined. Beat in the egg, yolk, and vanilla until combined. Add dry ingredients and beat at low-speed just until combined – the batter should look a little lumpy. Stir in chocolate chips. … Preheat oven to 325 degrees F. Line two baking sheets with parchment paper. … To assemble and bake: Lay half of the graham crackers out on the baking sheets – two crackers per sheet. Top each cracker with 3-4 pieces of chocolate then top the chocolate with two marshmallow halves, laying them side-by-side. Lay the remaining graham crackers on top of the assemble s’mores. Sandwich the s’mores between two large spoonfuls of cookie dough and using the remaining dough to wrap around each of the s’mores; the result should resemble a small cookie brick. … Space the cookies at least 4 inches apart on the two baking sheets. Bake for 20-24 minutes or until the tops and edges are lightly browned and the edges just lift off the pan with a spatula. (While baking, the s’mores will press down under the weight of the cookie dough and will sink further while cooling. Don’t worry if the cookies don’t end up completely covering the s’mores – it only adds to the charm here.) Transfer the baking sheets to wire racks and cool the cookies on the sheets for at least 5 minutes. Transfer the cookies to the wire racks and cool for another 5-10 minutes before serving. Serve warm or at room temperature.

Country Club Chicken: Topped with bacon, this easy chicken dish is wonderful! It's made with a dash of white wine, which offers a hint of sophistication.
Country Club Chicken Ingredients: 1 pound spaghetti, 4 chicken breasts, 1 large onion, 7 oz mushrooms, 2 cans cream of mushroom soup, 4 or 5 slices bacon, 1/4 cup dry white wine, 2/3 cup sharp cheddar, 1 golden delicious apple, butter or oil, salt & pepper. Directions: Mince onion. Clean and slice mushrooms. Peel and mince apple. Season chicken breasts with a generous amount of salt and pepper. Cook bacon and don’t clean out pan. Drain bacon on a paper napkin. Heat butter and quickly brown chicken breasts on both sides. Transfer to a casserole. Cook onion for a minute or three. Add mushrooms. After a minute or three add minced apple and cook it all for another 3 to 4 minutes. Season with a pinch of salt and pepper and crumble bacon in there. Pour in white wine. Add soup and sharp cheddar. Stir it into the sauce. And pour over the chicken breasts. Put the casserole in a preheated oven at 350F for 25 to 30 minutes. Until chicken is super tender and sauce is all hot and bubbly. Cook spaghetti according to directions.

Baked Spinach Dip Mini Bread Bowls 13.3 oz roll of refrigerated french bread loaf, I used Simply Pillsbury 2 Tablespoons extra virgin olive oil 2 Cups baby spinach, coarsely chopped 1 clove fresh garlic, minced 3 oz softened cream cheese 1/2 Cup light sour cream 2 Tablespoons fresh shredded parmesan cheese 1/8 teaspoon McCormick Gourmet Ancho Chile Pepper 1/8 teaspoon McCormick Gourmet Garlic Salt 1/8 teaspoon McCormick Gourmet Sicilian Sea Salt 1/8 teaspoon freshly ground black pepper 1/3 Cup shredded mozzarella cheese 1. Preheat oven to 350 degrees F. Spray 10 muffin cups with non stick cooking spray. Unroll package of french bread loaf and slice into 10 equal size slices, about 1 inch thick. Press each slice into about a 3 inch round, I did this by pressing in between my hands. Press into the bottom and up sides of the muffin cup. Set aside. 2. Heat oil in medium skillet over medium heat. Cook and stir spinach until wilted, about 3 minutes then add garlic, cook and stir for another minute then turn heat off. 3. Place cream cheese, sour cream, cooked spinach and garlic, Parmesan Cheese, Ancho Chili Powder, garlic salt, salt and pepper into a medium bowl. Mix until well combined. With a medium cookie scoop, scoop dip into each of the centers of bread bowls. Top evenly with shredded cheese and bake for 15-17 minutes until just turning brown on edges. Remove and let cool for 3-5 minutes before removing from oven. 10 mini spinach dip bread bowls

Creamy Stove Top Mac and Cheese by Smells Like Home Panera’s Stove Top Mac and Cheese source: Panera Bread Ingredients: 16 oz pipette pasta or other small pasta shapes 4 tbsp unsalted butter 1/3 cup all-purpose flour (or less) 2 1/2 cups milk, heavy cream, or half-and-half 4 oz white American cheese, chopped or torn into pieces 8 oz extra sharp white Vermont cheddar, shredded 2 tsp – 1 tbsp Dijon mustard (adjust according to your tastes) 1 tsp Kosher salt 1/4 tsp hot sauce (like Frank’s) Instructions: In a large stockpot, cook pasta according to package directions. Drain well. While the pasta cooks, melt the butter in a 4-quart sauce pan over medium heat. When the butter has melted and has started to bubble, whisk in the flour; cook for 1 1/2 -3 minutes whisking constantly. Gradually whisk in the milk until no lumps remain. Reduce the heat to medium-low and cook milk mixture, whisking frequently, until it thickens and bubbles, about 8 minutes. Remove sauce pan from the heat and by the handful, stir in the cheeses allowing all of the cheese to melt into the sauce before adding more. Stir in the mustard, salt, and hot sauce. Return the sauce pan to the heat and stir in the pasta. Be sure to stir up the sauce from the bottom of the sauce pan and thoroughly coat all of the pasta with sauce. Cook for 1-2 minutes over medium-low heat until heated through. Serve hot in bowls with spoons.
