Creamy Avocado Citrus Salad Dressing, Ingredients •1 ripe avocado •¼ c apple cider vinegar •¼. c. honey •3 T. lime juice •1 clove garlic •¼ c. cilantro •½ small jalepeno (or your preference) •¼ c. water or more, to thin to preference •Salt and pepper, to taste Instructions 1.Add all to food processor or blender and whiz up about a minute or until smooth and creamy. Add a drizzle of water if you’d like it thinner.

Balsamic Honey Chicken. Marinade: 1/4 c balsamic vinegar, 1 T Olive oil, 1 clove garlic, minced. Saute in olive oil, remove to platter, deglaze pan w/1 T butter & 2 T B. vinegar, add 3 T honey, simmer to thicken a little. Return chicken to pan to glaze. S & P to taste. Serve w/ pasta or rice.

Quinoa “Fried Rice” Quinoa fried rice. Quinoa is so incredible for you and a great source of protein. Making this version of “fried rice” a much healthier, more nutritious alternative. (And equally delicious!)Ingredients 1 cup quinoa (or 2½ to 3 cups leftover cooked quinoa) 1 ½ cups water or low-sodium stock ¼ small onion, chopped 2 carrots, peeled and chopped 3 scallions, chopped and divided 3 garlic cloves, minced ½ teaspoon fresh ginger, minced 1 tablespoon olive oil Optional 2 eggs, lightly scrambled (still raw) ½ cup frozen peas, thawed Sauce: 1 ½ tablespoons teriyaki sauce 2 ½ tablespoons soy sauce ¾ teaspoon sesame oil Instructions Rinse quinoa a few times in cold water. Bring quinoa and water or stock to a boil in a medium saucepan, and then reduce to a simmer. Season with salt. Simmer for 15-20 minutes until quinoa is fluffy and cooked through. Remove from heat and let set for five minutes or so. Fluff with a fork. Cool and store in the fridge, preferably overnight. Mix teriyaki, soy sauce, and sesame oil in a small bowl. Set aside. Heat ½ tablespoon olive oil in a large sauté pan over a high heat. Add onion and carrot, cook about two minutes. Add 2 scallions, garlic and ginger to the pan. Cook another two minutes. Add in the rest of the olive oil and the quinoa. Stir-fry about two minutes. Add sauce and stir-fry until incorporated, about two minutes. Make a well in the center of the quinoa pour eggs in, scramble. I made "skinny" chicken spaghetti. Quinoa pasta, 1 lb shredded chicken, 1 c Greek yogurt, 1 can 98% fat free cream of chicken, 1 can Rotel, and 1 cup reduced fat shredded cheese! Cook the noodles for about 3 minutes just to get them limp, mix all ingredients together and put in oven covered at 350 for 45 minutes. Stir and replace cover after about 30 minutes. Not the "cleanest" recipe but Delish! 253 calories for 1/8 of the pan. 22.3 g of protein and 4.8 g of fat!
