Who doesn't love butternut squash soup? So easy to make. You just roast butternut squash, carrots, parsnips, onions and maybe some garlic, all tossed with olive oil and salt. Then puree. Add a little vegetable stock and a splash of apple cider vinegar. Garnish with thyme. Voila.

Pickled mini apples should really be a part of your life. Make a basic apple-cider vinegar pickle brine, (without the onion or garlic) and simmer with cinnamon, cloves and black pepper. Chill and let marinate for a week.
