Who doesn't love butternut squash soup? So easy to make. You just roast butternut squash, carrots, parsnips, onions and maybe some garlic, all tossed with olive oil and salt. Then puree. Add a little vegetable stock and a splash of apple cider vinegar. Garnish with thyme. Voila.
