crockpot macaroni and cheese 1 1/2 cups milk One 12 oz can evaporated milk (I used skim, evaporated milk keeps the egg and milk from curdling) 1/4 cup (1/2 stick) unsalted butter, melted, cooled to room temp 3 large eggs 1/2 tsp salt 3 cups (12 oz) shredded cheese (I used an Italian blend, recipe calls for Italian fontina cheese) 1/2 pound elbow macaroni or mini penne tubes, par cooked and drained (this means cook them for about five minutes until tender but not completely cooked) Freshly ground black pepper to taste 1/2 cup grated Parmesan cheese Spray the inside of your slow-cooker with cooking spray or grease it with olive oil. Combine milk, evaporated milk, eggs, butter, and salt in slow-cooker and whisk until until smooth (or you can use an immersion blender to do the whisking for you). Add the shredded cheese (not the Parmesan) and macaroni, sprinkle with black pepper (and whatever other spices you want to use). Stir gently with a spatula to coat evenly. Home About me... And my second official Magazine/Cookbook day! awhoohoo! This week I wanted something easy because I was focusing on cupcake making.... more on that later ☺... So I picked a recipe from a cookbook that I have had for awhile but have actually never used, "Not Your Mother's Slow Cooker Recipes for Two" by Beth Hensperger. It has lots of yummy ideas for crockpot recipes. I selected a mac and cheese recipe because my fridge runneth over with cheese right now. The recipe calls for shredded Italian fontina cheese, I had left over shredded Italian four cheese blend which I figured would work just as well so I subbed it in the recipe. My total prep time was about ten minutes and that included precooking the macaroni noodles. Not bad! The mac and cheese cooks relatively fast compared to most slow-cooker recipes, it was completely done in about two and a half hours. As far as taste goes, it was probably about an 8 out of 10. I think that if I had used the fontina cheese it would have been more flavorful. I also added in some spices as the recipe only calls for ground black pepper, I put in some oregano, and a sprinkle of chili powder. I wish I had some fresh oregano to sprinkle on because that would've been amazing! Maybe mix in some chopped baby tomatoes too... Next time! And there will be a next time because all in all this was a good basic mac and cheese recipe and so easy to throw together. So yes, 8 out of 10 and it's a keeper. What did you cook today? Before dishing it up, I sautéed some bread crumbs with olive oil and sprinkled them over the top to make it a little fancier.

The Spanglish Sandwich with Avocado. Do you remember the Spanglish Sandwich? This was the sandwich that chef Thomas Keller developed for Adam Sandler to make in the movie Spanglish. It had to justify the title the "world's greatest sandwich," and by the way the recipe immediately flew around the internet, it did seem like it achieved that! It's basically a bacon-lettuce-tomato sandwich dressed up with a fried egg and drippy egg yolk. Delicious! It's an indulgence for a busy night since it comes together quickly, and it's filling without being too heavy. It's comfort food and brain food at the same time. And if you want to dress it up just a little more, or leave off the egg, try topping it with avocado like in the top photo. We first published this recipe several years ago -- here it is again. World's Greatest Sandwich from Thomas Keller makes 1 sandwich 3-4 slices of bacon 2 slices of Monterey Jack cheese 2 slices of toasted rustic country loaf (pain de campagne) 1 tbsp of mayo 4 tomato slices 2 leaves of butter lettuce (yes, it's called butter lettuce) 1 teaspoon butter 1 egg Preparation: 1. Cook the bacon until crisp, drain on paper towels 2. Place slices of cheese on one side of toasted bread. Place in toaster oven or under broiler to melt. 3. Spread mayo on other slice of bread top with bacon, sliced tomato, and lettuce 4. On non-stick skillet, melt butter over medium heat. Fry egg, turning over briefly when the bottom is set (keep yolk runny) 5. Slide finished egg on top of lettuce, top with other slice of bread (cheese-side down genius) 6. Crockpot cranberry pork roast Yield: 12 servings (Serving size: 3 ounces pork, 1/4 cup sauce)Prep Time: 25 min Cook Time: 7 hrs Ingredients: 3 pound lean, boneless pork loin roast, trimmed of fat and cut in half crosswise 16 ounces canned whole berry cranberry sauce 1 Tablespoon brown sugar 1 teaspoon yellow mustard 2 Tablespoons cornstarch 2 Tablespoons water Directions: 1. Heat large, nonstick skillet over medium-high heat. Spray with nonstick spray. Add roast halves, browning on all sides. Place roast halves in the insert of a slow cooker that has been sprayed with nonstick spray. 2. In a medium bowl, mix cranberry sauce, brown sugar and mustard; pour over the roast in the crockpot. Cover with lid; cook on HIGH for 1 hour. Reduce to LOW and cook 6 hours. Remove roast from crockpot, reserving cranberry mixture in crockpot. Set roast aside; keep warm. 3. In a large bowl, whisk together cornstarch and water until well mixed. Scoop cranberry mixture into the large bowl and then whisk cornstarch and cranberry mixture together. Place in the microwave and cook on HIGH for 2 minutes, or until thickened. 4. Place pork roast on platter and use two forks to shred it apart. Top with cranberry sauce and serve immediately.

Grilled Bruschetta Chicken Source: adapted from Kraft Foods 4 small boneless skinless chicken breast halves 1/2 cup KRAFT Sun-Dried Tomato dressing, divided 2 tomato, finely chopped 1/2 cup shredded part-skim mozzarella cheese 1/4 cup chopped fresh basil or 1 tsp. dried basil leaves Place a large sheet of heavy-duty foil over half of grill grate; heat grill to medium heat. Meanwhile, place chicken in resealable plastic bag. Add 1/4 cup dressing and seal bag. Turn bag over several times to evenly coat chicken with dressing. Refrigerate 10 minutes (I marinate it all day if I remember in time). Remove chicken from bag; discard bag and dressing. Grill chicken on uncovered side of grill for about 6 minutes. Meanwhile, combine remaining 1/4 dressing, tomatoes, cheese and basil. Turn the chicken over and place cooked-side up, on foil on the grill. Top with tomato mixture. Close lid. Grill 8 minutes or until chicken is done.
