Mom's Turkey Meatloaf from Ellie Krieger (Food Network). Usually, I flee from anything turkey when you start subbing it for beef. Surprisingly, this is a pretty good tasting recipe IF you use dark ground turkey. Seriously, my dh said it was pretty tasty, and he loves his red meat.

The best meatloaf ever~will knock your socks off! Blogger: "Rather than making a loaf, I spread it out on a baking sheet, covered it with plump sun-dried tomatoes, fresh basil and thick slices of creamy mozzarella then rolled it up (jelly roll style). After roasting it, I served whole slices on pools of garlicky tomato sauce." GF if i use gluten free breadcrumbs

I visited my father recently and wanted to leave him with lots of food. I cooked meatloaf in muffin tins. When cooled, I froze the meatloaf pieces in a large ziploc bag. I also put cooked mashed potatoes in the muffin tin, froze them, then removed them after placing pan in hot water for 15 seconds. Voila! Ziploc bags filled with frozen, individual-sized meat loafs and mashed potatoes!

Although I'm not exactly sure as to what kind of foods were served in the 1950's, I somehow keep thinking about meatloaf. This meatloaf dish inspired by the Oscar nominated movie The Tree of Life looks very tasty. #CouchCritics
