Butter-Poached Newfoundland Lobster Ingredients: lobster tails lobster shells 8 oz cultured butter, cold, cut into 1-inch pieces 8 oz Pinot gris or other semi-dry white wine 1 bay leaf, fresh preferred 2 wedges preserved lemon 2 cloves garlic, peeled and bruised 2 inches fresh leeks, green and white parts, slivered 1 heirloom tomato, cored, seeded and coarsely chopped 1/2 teaspoon safflower stamens (for color, optional) 1 tablespoon fresh marjoram 1-1/2 tablespoons fresh Italian parsley, torn sea salt and freshly-ground black pepper Directions: Heat wine and empty lobster shells in a heavy-bottomed saucepan over medium heat until simmering. Reduce heat to medium low, add lemon, bay, garlic, tomato and leeks and cook until tomatoes and leeks begin to disintegrate, about 12 minutes. Whisk in butter one piece at a time, allowing each to incorporate before adding the next. Do not allow to boil or the emulsion will break. Add safflower, marjoram, parsley and lobster tails and gently poach until firm and opaque, about 10 minutes. Season to taste with sea salt and black pepper. To serve, arrange tails in a shallow bowl and spoon poaching liquid over the top. Serve with crusty bread and a salad of field greens, perhaps. Leftover poaching liquid makes a great base for bisque. Keep it in the freezer up to three months.

Skinny Chicken Parmesan adapted from both Skinny Taste and The Girl Who Ate Everything serves 4 (one chicken breast each, 225 calories) 2 (8 oz) chicken breasts, sliced in half (horizontally, or butterflied but cut all the way through. You will end up with 4 pieces of chicken) 3/4 cup seasoned breadcrumbs 1/2 teaspoon garlic powder 1/2 teaspoon Italian seasonings (I don't necessarily like a lot of Italian seasoning, so add more if you like it!) 1/4 cup grated Parmesan cheese (This does not have to be fresh. In fact a use the stuff in the green bottle more times than not) 1 1/2-2 tbsp butter, melted 3/4 cup reduced fat mozzarella cheese 1 cup marinara or your favorite spaghetti sauce cooking spray Preheat oven to 450°. Line large baking sheet with foil (easy clean up) and spray lightly with cooking spray. Combine breadcrumbs, Parmesan cheese, garlic powder, and Italian seasonings in a bowl. Melt the butter in the microwave in another bowl (this is usually melted after about 20 seconds, so watch it closely.) Lightly brush the butter onto the chicken, then dip into breadcrumb/cheese mixture. Place on baking sheet and repeat with the remaining 3 pieces of chicken. Lightly spray a little more cooking spray on top (this makes it nice and crispy) and bake in the oven for 20 minutes. Remove chicken from oven and turn over. Spoon sauce over each piece and top with mozzarella cheese and bake another 5 minutes or until cheese is melted. I like to serve this on a bed of whole grain spaghetti tossed in additional spaghetti sauce. You can also enjoy it with a side salad or veggies.

'Incredible Baked Meatballs Recipe: 1 lb. Hamburger, 2 Eggs, beaten with 1/2 cup Milk, 1/2 cup Grated Parmesan , 1 cup Panko or Bread Crumbs, 1 small Onion, minced, 2 Cloves Garlic, minced, 1/2 tsp. Oregano, 1 tsp. Salt, Freshly Ground Pepper to taste, 1/4 cup minced Fresh Basil. Mix all ingredients with hands. Form mixture into Golfball sized Meatballs. Bake at 350 Degrees for 30 minutes. (make smaller and use very low fat ground beef or a mixture of all white meat turkey/chicken with it)
