40 minutes was way too long for me. Almost all of them burnt and were just too dried out. I should have taken them out at 30 minutes. Also I tossed them in 2 T of coconut oil and 2 T ranch mix as per a different recipe and it was not too much oil.
Miso soup is very light. I used shiitake mushrooms and cooked for minutes. Added fresh ground ginger for more flavor. You don't want to add the miso and scallions until right before serving so I brought a little of both along to work to add during lunch.
