FALAFEL SALAD RECIPE: FALAFEL SALAD RECIPE INGREDIENTS 1 3/4 cups dry chickpeas (garbanzo beans), soaked overnight 2 cloves garlic, peeled and smashed 1 yellow onion, chopped 1 small handful of parsley, chopped and stems removed 1 tsp cumin 1 tsp coriander seeds, ground 1/4 tsp cayenne pepper 1/2 tsp baking soda 1 tsp salt 2 tbsp lemon juice, or 1 small lemon 1/4 – 1/2 cup water 2 tbsp all purpose flour (enough to slightly hold the mixture together) 1 egg, lightly beaten 1/4 cup sesame seeds vegetable oil for frying DRESSING INGREDIENTS (makes a little more than 1/2 cup) 1/4 cup oil (canola, olive, safflower, or grapeseed) 2 tbsp lemon juice or 1 small lemon 1/4 cup yogurt (non-Greek) 1 tsp sugar 1 tbsp apple cider vinegar salt romaine lettuce, chopped cherry tomatoes, halved cucumber, sliced onion, sliced capers, drained

Suzie wanted something s'mores. So I made this. The really cool thing is that I used homemade marshmallow fluff instead of the chemical-compound stuff you get at the store. Also, their link to the bread recipe doesn't work, so I substituted the bread for cinnamon rolls. It is delicious, just a little time-consuming.

Chocolate Chip Cookie Dough Cheesecake Bars Source: very slightly adapted from My Baking Addiction (get the printable recipe here) Ingredients: Crust: 1 1/2 cups graham cracker crumbs 5 tablespoons unsalted butter, melted Chocolate Chip Cookie Dough: 5 tablespoons unsalted butter, room temperature 1/3 cup packed light brown sugar 3 tablespoons granulated sugar 1/4 teaspoon salt 1 teaspoon pure vanilla extract 3/4 cup flour 2/3 cup chocolate chips Cheesecake Filling: 10 oz cream cheese, room temperature 1/4 cup sugar 1 large egg, room temperature 1 teaspoon pure vanilla extract Directions: 1. Preheat the oven to 325 F. Line an 8" square baking pan with parchment paper or foil allowing a little overhang and spray with nonstick cooking spray. Set aside. 2. Mix the melted butter and graham cracker crumbs until thoroughly combined. Press the mixture into the bottom of the prepared pan. Bake in preheated oven for 6 minutes. Remove pan to a cooling rack. Leave your oven on while you prepare the dough. 3. While the crust is cooling, prepare the chocolate chip cookie dough. In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer, beat butter, brown sugar, granulated sugar, salt and vanilla until smooth and thoroughly combined, about 1 minute. Mix in the flour on low speed, and mix until just incorporated. Mix in the chocolate chips. Set aside. 4. In the bowl of a stand mixer fitted with the paddle attachment or in a large bowl with an electric mixer cream together the cream cheese and sugar until smooth. Mix in the egg and vanilla on low speed just until incorporated. Pour the cheesecake batter into the prepared crust. Using your hand to form clumps, distribute the cookie dough onto the top of the cheesecake batter in teaspoon-sized clumps. Be sure to use all of the dough. 5. Bake for about 30 minutes, until the top feels dry and firm (the cookie dough) and the entire pan looks set if given a gentle shake. Move bars to a cooling rack and allow to cool completely. Chill in refrigerator overnight or for at least a couple hours. 6. Lift the bars out by the overhang and cut into squares for serving.

Turkey Lettuce Wrap Tacos with chilies, cumin, cilantro, lime and tomato avocado salsa. Low carb delish!
Turkey Lettuce Wrap Tacos with Chiles, Cumin, Cilantro, Lime and Tomato-Avocado Salsa (Makes about 8 tacos.) For tacos: 1 T olive oil 1 tsp. minced garlic (I used minced garlic from a jar, but fresh garlic would be even better) 1-2 T diced green chiles (I used about half of a 4 oz. jar of diced green chiles, recipe called for fresh chiles which would be a bit hotter) 1 tsp. ground cumin 1/4 tsp. ground chipotle chile powder (recipe called for cayenne) 1 1/2 lbs. ground turkey 1/2 tsp. salt 1/2 cup thinly sliced green onions 1 large bunch cilantro, finely chopped (about 1 1/4 cups chopped cilantro. I used 1 cup in tacos and 1/4 cup in salsa. Use more or less cilantro to taste.) 2 T fresh lime juice 2 large heads romaine lettuce (or use iceberg, Boston lettuce, or butter lettuce) Heat olive oil in heavy frying pan then add minced garlic and diced green chiles and saute about 1 minute. (I used a non-stick pan. If you use fresh garlic and chiles, I'd cook them a bit longer.) Add cumin and ground chipotle or cayenne and cook about 1 minute more. Then add turkey and salt and cook over medium-high heat, breaking apart with the back of the turner as it cooks. Cook about 5 minutes, or until turkey is starting to brown. While turkey cooks, thinly slice green onions and set aside, then wash cilantro, spin dry or dry with paper towels, and finely chop cilantro. Cut off root end of lettuce, discard tough outer leaves, and wash lettuce and spin dry in salad spinner or dry with paper towels. When turkey is lightly browned, add sliced green onions and cook about 2 minutes. Turn off heat, then stir in 1 cup chopped cilantro and 2 T lime juice. For salsa: 2 medium avocados, diced 1 1/2 cups finely chopped cherry tomatoes 1/4 cup finely chopped cilantro 2 T fresh lime juice 2 T olive oil (optional) sea salt to taste Peel and dice avocado, place in glass or plastic bowl and toss with lime juice. Stir in chopped tomato, chopped cilantro, and olive oil, season to taste with salt. To assemble tacos: Spoon 2-3 large spoonfuls of turkey mixture into each piece of lettuce. (I used the inner more folded pieces of lettuce and saved the flatter outer pieces for using in salad.) Top meat mixture with salsa. You could also eat this mixture inside whole wheat tortillas or pitas, or even corn tortillas if you're not a South Beach dieter.

Healthy Chicken Gyros For the tzatziki: 16 oz. plain yogurt (not nonfat, if possible) 1/2 hothouse cucumber or 1 regular cucumber, peeled and seeded 2-3 cloves garlic, pressed through a garlic press (or finely minced) 1 tsp. white wine vinegar Salt and pepper Squeeze of fresh lemon juice Extra virgin olive oil For the chicken: 4 cloves garlic, smashed Juice of 1 lemon 2 tsp. red wine vinegar 2 tbsp. extra virgin olive oil 2 heaping tbsp. plain yogurt 1 tbsp. dried oregano Salt and pepper 1¼ lbs. chicken pieces (I use boneless, skinless chicken breast halves) To assemble: Pita bread Fresh tomatoes, seeded and diced Red onion, sliced thin DIRECTIONS To make the tzatziki sauce, strain the yogurt using cheesecloth over a bowl. Let strain for several hours or overnight, if possible, to remove as much moisture as possible. Shred the cucumber. Wrap in a towel a squeeze to remove as much water as possible. Mix together the strained yogurt, shredded cucumber, garlic, white wine vinegar, salt and pepper to taste, and lemon juice. Drizzle lightly with olive oil. Refrigerate for at least 30 minutes before serving to allow the flavors to meld. To prepare the chicken, combine the garlic, lemon juice, red wine vinegar, olive oil, yogurt, oregano, and salt and pepper to taste in a medium bowl. Whisk together until mixed well. Add the chicken pieces to the bowl and mix well to coat. Cover and refrigerate for about 1 hour. Cook the chicken as desired, either in the skillet or with the broiler. (I butterflied the chicken breasts and then cooked them under the broiler.) Once the chicken is completely cooked through, transfer to a plate and let rest for 5 minutes. Cut into strips. Heat pitas (I sprayed with some spray oil and then popped them in the toaster oven for a few minutes). Top with chicken, tzatziki sauce, diced tomatoes and sliced onions. Serve immediately.
