Red Roasted Carrots Combine a couple pinches (or a half teaspoon each) of cinnamon, paprika, chili powder, garlic powder and sea salt. Mix spices well in a bowl (or bag!) with 5 or 6 diagonally (oval) cut carrots plus 1T olive oil and 1t sesame oil. (Sub coconut oil) Roast at 400 for 20 minutes on a cookie sheet until the edges are crispy brown. Enjoy warm

Raw Food Recipes: Broccoli stirfry
Broccoli Mushroom “Stir Fry” Marinade: 1/4 C Olive Oil 2 T Nama Shoyu 1 T Agave or Raw Honey Whisk olive oil, nama shoyu and agave or honey together. Stir Fry 1 1/2 C Sliced Mushrooms 1 C Chopped Broccoli 1 Large Parsnip 2 Carrots 1 C Pea Pods Sesame Oil (optional) Black Sesame Seeds (Optional) Place broccoli and mushrooms in marinade. Stir to coat. Set aside. Peel and cut parsnip into pieces. Place in food processor and process until coarsely chopped. Cut the carrots into match stick sized pieces. Chop the pea pods into 1/2 inch pieces and mix into the parsnip “rice” with the carrots. Stir in the entire broccoli, mushroom marinade mix. Toss. You can dress it with a little sesame oil and black sesame seeds for more flavor.

Pomegranate, Kale, and Wild Rice Salad with Walnuts and Feta... Oh, My! I would probably be the only one eating this, but that's fine! INGREDIENTS For the salad 1 cup pomegranate seeds 2 cups chopped baby kale 2 cups cooked wild rice (use leftover rice or buy precooked) ¼ cup toasted walnuts ¼ cup feta cheese For the dressing ½ cup minced onion or shallot 2 tablespoons olive oil 2 tablespoons water 2 tablespoons honey ½ tablespoon apple cider vinegar ½ teaspoon salt 1 squeeze lemon or orange juice INSTRUCTIONS Prep the salad ingredients (chop, rinse, toast, etc). Chill the ingredients in the fridge while you’re making the dressing if you want a cold salad. Mince the shallot or onion and saute in ½ tablespoons olive oil to reduce the bite. When soft and fragrant, remove from heat and transfer to a food processor. (If you want a stronger flavor for your dressing, skip the sauteing altogether. The shallot in particular works well for this.) Pulse the onions or shallot with the remaining olive oil, water, honey, apple cider vinegar, salt, and orange juice until smooth and creamy. Taste and adjust. Add additional olive oil or water to keep the mixture moving through the food processor. Toss the salad ingredients together with the dressing just before serving. I prefer to serve this at room temperature or chilled slightly.

Blueberry Coconut Dreamsicles Prep time 5 mins Author: www.love-fed.com Serves: 5 Ingredients 1 cup blueberries ⅛ cup liquid sweetener (I used Coconut Nectar) 1 lemon juiced 12 oz coconut milk (full fat) Instructions Before you begin recommendations: (for those “new” to coconut milk/cream). You will want to refrigerate the canned coconut milk (buy the whole coconut milk not lite) for aprox 24 hours and then when you open the can you will see the creamy top which is the part you will want to use for this recipe, scoop out the cream and reserve the water for another recipe. In a medium bowl combine the berries, lemon and sweetener, mix lightly enough to coat the berries. You may opt to leave out the sweetener as the coconut cream tends to be sweet enough for some. Adjust the recipe to your tastebuds and dietary needs. Put coconut cream in a medium mixing bowl and whip until thickened adding in the blueberry mixture while whipping. Some of the berries will break down releasing their juices and creating texture. If you want the berries whole hand mix them in gently using a rubber spatula. If you prefer a quicker alternative and a more purple colored pop simply blend all of the ingredients together in a blender. Pour mixture into popsicle molds. Place a 6 inch twig in place of the stem and freeze for 2 – 6 hours or until completely frozen. Run the mold under warm water for a few seconds and gently remove the popsicle from the mold
