MAC N CHEESE WITH SPINACH MUFFINS:: ~~Ingredients~~: 4 c cooked whole wheat or high fiber macaroni 1 T butter 1 T flour 1 c skim milk 1 garlic clove, minced 3 oz sharp cheddar cheese, shredded 3 oz Gruyere cheese, shredded 1 egg 1 egg white 1 (10 oz) package of frozen chopped spinach, defrosted, drained and patted dry (or you could use 1 cup cooked fresh spinach) Salt & pepper to taste ~~Directions~~: 1. Pre-heat the oven to 400. Lightly mist a 12-cup muffin tin with cooking spray and set aside. 2. In a small sauce pot, melt the butter over medium heat. Add the flour, mixing it into the butter until thick. Stir in the milk and garlic and raise the temp to bring the mixture to just under a boil. Add the cheese and whisk mixture together until thoroughly combined into a cheese sauce. 3. Remove the cheese sauce from heat and then mix in the egg and egg white (binding agents) until combined. 4. In a large bowl, combine the pasta, spinach, cheese sauce, salt and pepper and mix together. Spoon the mixture evenly into the cups of your prepared muffin tin. 5. Bake for 10-15 minutes until the tops slightly brown. Let cool 5 minutes before removing from muffin tin. Yields 12 muffins. Easy Salt & Vinegar Roasted Chickpeas Adapted from Homemade Salt & vinegar Chips and Green Beans. Ingredients: 2 cups canned chickpeas* 3-4 cups white vinegar 1 tsp Coarse sea salt 2 tsp extra virgin olive oil Directions: Line a baking sheet with tin foil or parchment paper. Take chickpeas and vinegar and place in a medium sized pot. Add a dash of sea salt. Bring to a boil and then remove from heat. Let sit in pot for 30 minutes. Preheat oven to 425F. Carefully drain chickpeas. Place on lined baking sheet and drizzle with olive oil and sea salt. Massage with fingers until fully coated. Roast for 45 minutes, flipping once half way through. Keep a careful eye on them after 35 minutes of cooking to ensure they don’t burn. The goal here is crispy and golden chickpeas, not black…lol. Enjoy as a high protein snack or as a side to a lunch or dinner. *Note: I assume you could also use dry chickpeas and cook them in vinegar from scratch. Also note: When I brought the cooked chickpeas to a boil, some of the peas split open and some of the skins came off. Not to worry if this happens-it will turn out regardless!

Cajun Sausage Cheese Stuffed Bread 1 loaf frozen bread dough, thawed, 1 pound of cooked breakfast sausage 8 - 10 oz. shredded sharp cheddar cheese or a mix of cheddar and mozzarella 1egg, mix together with sausage before you cook it Melted butter 1 white onion (sautéed), I sautéed the onion with the sausage Roll out bread with rolling pin, spread melted butter, cooked sausage, onions and cheese. Roll up and place in a bundt pan or cookie sheet. I would bake @ 350 until brown.
