Deen Bros: Mama’s Spaghetti Casserole with Baked Garlic Herb Bread Nothing takes us back home quicker than a big plate of Mama’s Spaghetti Casserole; it was one of our favorites growing up, and we both still love to make it. Serve it with a green salad for a hearty dinner any day of the week. Ingredients: CASSEROLE: Salt 1 pound uncooked spaghetti 1 tablespoon extra virgin olive oil 1 pound ground beef 1/2 teaspoon salt 1/2 teaspoon dried oregano 1/4 teaspoon freshly ground black pepper Pinch crushed red pepper flakes 1 26-ounce jar spaghetti sauce 3 ounces Parmesan cheese, freshly grated (about 3/4 cup) 8 ounces mozzarella cheese, shredded or thinly sliced (about 2 cups) GARLIC HERB BREAD: 1/2 cup (1 stick) unsalted butter, melted 2 tablespoons chopped fresh parsley 2 cloves garlic, minced Pinch salt 1 16-inch loaf Italian bread, halved lengthwise Instructions: Preheat oven to 350°F. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions; drain. In a large Dutch oven, heat the oil over medium-high heat. Add the beef; cook about 5 minutes or until brown, breaking meat up with a fork as it cooks. Add the salt, oregano, black pepper, and red pepper flakes. Stir in the spaghetti sauce, Parmesan, and the cooked spaghetti. Transfer to baking dish. Top evenly with mozzarella. Bake for 30 to 40 minutes or until the cheese is melted and bubbling. For the garlic bread, while the casserole bakes, whisk together the butter, parsley, garlic, and salt. Brush the butter mixture over the cut sides of both bread halves. Wrap each half in aluminum foil; bake, alongside the casserole, for 15 to 20 minutes or until heated through. For crispier bread, unwrap for the last 5 minutes of baking. Serve bread with the casserole. Servings: 8 Prep Time: Cook Time: Difficulty: Easy

Ham and Cheese Sliders I know what you are thinking...ham and cheese sliders; does that really require a recipe? The answer is YES it does. These have so much flavor. Sure you have your classic ham and cheese sandwich as the base of the recipe but then you top it with a flavorful poppyseed sauce. The sauce is a combo of Worcestershire sauce, onion, mustard, and butter that makes these anything but ordinary. These can be made ahead for a party and are kid friendly because they are small and familiar. My son hates mustard but couldn't taste the little bit of mustard in the sauce. I don't know about you but sometimes I just want to cook something that I know my kids will eat without complaining about it. This definitely would qualify for a "No Cooking" Friday meal because it's so easy. I made these right after Easter and used my leftover ham...sorry I didn't post it sooner so you could use your leftover ham too! These are great as an appetizer or make it a meal. Ham and Cheese Sliders adapted slightly from the Recipe Club 24 good white dinner rolls 24 pieces good honey ham 24 small slices Swiss cheese 1/3 cup mayonnaise 1/3 cup miracle whip Poppy seed sauce (you probably could half this...I had plenty extra) 1 Tablespoon poppyseeds 1 1/2 Tablespoons yellow mustard 1/2 cup butter, melted 1 Tablespoon minced onion 1/2 teaspoon Worcestershire sauce In a small bowl, mix together mayonnaise and miracle whip. Spread onto both sides of the center of each roll. Place a slice of ham and a slice of Swiss inside of each roll. Close rolls and place them into a large baking dish or heavy cookie sheet. Place very close together. In a medium bowl, whisk together all of the poppy seed sauce ingredients. Pour evenly over all of the sandwiches. You do not have to use all of the sauce! Just use enough to cover the tops. Let sit 10 minutes or until butter sets slightly. Cover with foil and bake at 350 degrees for 12-15 minutes or until cheese is melted. Uncover and cook for 2 additional minutes or until tops are slightly brown and crispy. Serve warm. ** sandwiches can be assembled a day ahead and kept in the fridge ready to bake. Tangled Thai Salad with Peanut Lime Dressing Tangled Thai Salad At Fresh we use a turning slicer (spiralizer) to cut the carrot and yellow beets into super-long, thin strands that form a big round tangle of a salad. You probably don’t have a turning slicer at home, so it’s worth getting a julienne peeler, which will give you nice long strands as well. They won’t be mega-long, like ours, but a turning slicer is about $100, and a julienne peeler is only about $10, so it’s a pretty good compromise. If you don’t have either, just cut the vegetables into sticks as thin and long as you can. Serves 1 as a meal 1 cup chopped napa cabbage 1/3 cup sliced jicama (cut into small sticks) 2/3 cup shredded or spiralized carrot 2/3 cup shredded or spiralized yellow beet 4 tbsp Peanut Lime Dressing (recipe follows) 3 slices cucumber, halved 2 tsp chopped raw peanuts 2 tbsp Fresh Salad Topper (recipe follows) 1 lime wedge 2 to 3 tbsp chopped cilantro 1. Put napa cabbage in a large, shallow serving bowl (or plate). Top with jicama. 2. Pile the carrot and beet on top and drizzle with dressing. 3. Garnish with the cucumber, peanuts, Salad Topper, lime, and cilantro. Peanut Lime Dressing This dressing will keep for up to a week in the fridge. It is delicious on the Tangled Thai Salad, but would be equally good on any salad or even poured on top of cold noodles. Makes 1 cup 3 cloves garlic, minced (about 1 tbsp) 2 tbsp tightly packed cilantro 2 tbsp natural peanut butter 2 tbsp + 2 tsp lime juice 1 tbsp + 1/2 tsp tamari 1 tbsp rice vinegar 1 tbsp peeled and chopped ginger 2 tsp coconut milk 1 1/2 tsp organic sugar 3/4 tsp sesame oil 3/4 tsp sambal oelek 1/2 cup sunflower oil 1. In a blender, puree all ingredients except the sunflower oil. 2. With blender running, add sunflower oil in a thin stream until dressing is emulsified. Fresh Salad Topper This crunchy mix adds great flavour and texture to any salad. If you want to use it as a topper for fruit salad, yogurt, or oatmeal, leave the salt out and replace it with sugar. If you can’t find puffed quinoa at your local health food store, you can substitute puffed millet. This mixture keeps for months in an airtight container. Makes about 1 3/4 cups 1 cup puffed quinoa 1/4 cup goji berries 1/4 cup currants 2 tbsp sliced almonds 2 tbsp chopped hazelnuts 2 tbsp chopped pistachios 1/4 tsp sea salt 1. Put all of the ingredients in a bowl and mix well.

Pan Roasted Chicken With Lemon Garlic Green Beans - *6 tablespoons olive oil *2 lemons, 1 thinly sliced, 1 juiced *4 cloves garlic, minced *1 teaspoon kosher salt *1/2 teaspoon freshly ground black pepper *3/4 pound trimmed green beans *8 small red potatoes, quartered *4 chicken breasts (bones left in, with skin, about 3 1/4 pounds)
Garlic & lemon chicken with green beans & roasted potatoes: Just toss it in the oven for a complete meal. Serve w crusty bread to soak up the lemony sauce. Directions 1. Preheat oven to 450°F. Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet. 2. In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the green beans and toss to coat. Using a slotted spoon or tongs, remove the green beans and arrange them on top of the lemon slices. Add the potatoes to the same olive-oil mixture and toss to coat. Using a slotted spoon or tongs, arrange the potatoes along the inside edge of the dish or skillet on top of the green beans. Place the chicken in the same bowl with the olive-oil mixture and coat thoroughly. Place the chicken, skin-side up, in the dish or skillet. Pour any of the remaining olive-oil mixture over the chicken. 3. Roast for 50 minutes. Remove the chicken from the dish or skillet. Place the beans and potatoes back in oven for 10 minutes more or until the potatoes are tender. Place a chicken breast on each of 4 serving plates; divide the green beans and potatoes equally. Serve warm.
