Skinny Monkey Cookies (no sugar) Ingredients: 3 bananas 2 cups old-fashioned oats 1/4 cup creamy peanut butter 1/4 cup unsweetened cocoa powder 1/3 cup unsweetened applesauce 1 tsp. vanilla extract Dash of cinnamon (optional) Directions: Preheat oven to 350°F. Mash bananas in a large bowl, then stir in remaining ingredients. Let batter stand for approximately 20 minutes, then drop by teaspoonfuls onto ungreased cookie sheet. Sprinkle with cinnamon if desired. Bake 10-12 minutes.

Come Together Kids: Banana "Ice Cream" (made from bananas ONLY!) Here's what to do: 1. Get some bananas. We used several "extra ripe" ones that I found marked down at the produce market, but any ripe bananas will work. 2. Peel the bananas, cut them into approx. 1/2" slices, and put them on a tray. 3. Pop the tray in the freezer for a few hours until the bananas are frozen. (Once they're frozen, you can also put them in a bag to use later). 4. Put your bananas in a food processor or blender. (NOTE: I used a blender because that's what I have, but I think a food processor would have worked much better. I had to keep pushing the frozen bananas down in the blender so the blades could reach them and it took a little longer for them to reach the right consistency) 5. Start mixing. First the bananas will just get chopped up. 6. But as you keep mixing and scraping down the sides, it'll get creamier and creamier. 7. You can eat it right now, just out of the blender/food processor, and it'll be like a soft serve custard. 8. Or you could put the mixture back in the freezer where it will get harder and more scoopable like regular ice cream. My son liked his more like regular ice cream You can also mix in other ingredients when it's in the soft-serve state ~ we like to add in peanut butter, chocolate chips or chopped nuts - YUMMY!! NOTE: We just use our blender or food processor to make our banana ice cream and although it takes a little bit of time and a decent amount of scraping down the sides, it works well for us. However, my daughter was recently at a friend's house and her mom made the same banana ice cream using this Yonanas Ice Cream Maker. I wasn't there to test it out or use it myself, but the mom said it was really easy to use and worked really quickly. I think if you try this out, like it and want to make it often, a machine specifically designed to work on frozen fruit might come in handy.

WEIGHT WATCHERS MEXICAN ZERO POINTS SOUP Hands-on time: 40 minutes Time to table: 1 hour Makes 12 cups 6 cups vegetable broth (I used 6 cups water and Better Than Bouillon) 14 ounces canned diced tomato, Mexican-style preferred 2 cups fresh green beans (start with 8 ounces, then trim and snap into bite-size pieces) 3 cloves garlic, minced 2 small zucchini (about 8 ounces before trimming) 1 cup tomatillo, cubed (start with about 4 ounces or 2 medium tomatillos) 1/2 medium poblano chili pepper, chopped 1 medium jalapeño, membranes and seeds removed, minced (I used several rings of homemade pickled jalapeños) 1 medium red or yellow (Spanish) onion, chopped 1 green pepper, chopped 1/2 teaspoon cumin 1 teaspoon fresh oregano (I used 1/2 teaspoon dried oregano) 2 roasted red peppers packed in water (I used these jarred peppers from Zergut) 1 tablespoon chipotle peppers in adobo sauce (these are found in small cans in the 'Mexican' section and boy, and be careful, they are hot!!!! I used only a scant teaspoon) Salt to taste (Weight Watchers says 3/4 teaspoon 'salt', I used a good couple of teaspoons of kosher salt) 2 tablespoons lime juice (from 2 limes) 1/2 cup fresh cilantro, chopped OPTIONAL BUT TIME-SAVING TIP Bring the vegetable broth (or water for bouillon) to a boil in an electric tea kettle or in the microwave while prepping the vegetables. Heat a large pot or Dutch oven on MEDIUM HIGH. Add the vegetables and spices (canned tomatoes through as oregano) as they're prepped. Add the broth when it's ready. Whiz the red peppers and chipotle pepper in a mini food processor and stir in. (I love mine that came with an immersion blender. Could you skip this step? Yes but do make sure to mash the chipotle pepper to distribute as finely as possible throughout the soup.) Cover and bring to a boil. (Because I used boiling water, the soup was just starting to boil when I added the last ingredients.) Once at a boil, partly uncover the soup, reduce the heat to maintain a slow simmer and simmer for about 10 minutes. Stir in salt, lime juice and cilantro. Serve immediately.
