Cheesy Corn Cakes - These were a hit! Made for Thanksgiving, without the avocado dip. Used very little oil in the pan because they did get greasy very easily. Also made them smaller than recommended for faster and easier cooking. Recipe made 30-35 patties. They cooled off and were a great poppable side dish for everyone.
Greek pasta salad: 2 cups penne pasta 1/4 cup red wine vinegar 1 tablespoon lemon juice 2 cloves garlic, crushed 2 teaspoons dried oregano salt and pepper to taste 2/3 cup extra-virgin olive oil 10 cherry tomatoes, halved 1 small red onion, chopped 1 green bell pepper, chopped 1 red bell pepper, chopped 1/2 cucumber, sliced 1/2 cup sliced black olives 1/2 cup crumbled feta cheese
Crockpot Beef Stroganoff 1-2 lbs cube steak, cut into one-inch pieces 2 cans condensed golden mushroom soup (no substitutes!) 1 cup chopped onion 1 Tb Worcestershire 1 14 oz can beef broth, salt & pepper 4 oz cream cheese, room temp 1/2 c. sour cream In the crockpot, combine the meat, soup, onion, Worcestershire sauce, salt & pepper and beef broth. Cook on low for 5-6 hours 3. Stir in cream cheese and sour cream about half hour b/f serving. Serve over Egg Noodles.
Avocado Egg Salad To make the avocado egg salad, you need the following: 4 hard-boiled eggs, 1 large avocado (cubed as you see above) 2 tablespoons mayonnaise,1 teaspoon curry. Pinch of salt and pepper. - This sounds AMAZING! Could nix the mayo for just a little olive oil... Serve with low carb tortillas
