Nutella Waffle Sandwich Cookies Makes 1 Dozen Cookies Time: 30 minutes for prep 2 minutes cook time Ingredients: -1 cup heavy cream -1 ½ teaspoons vanilla extract -1 ½ cups powdered sugar -1 ½ cups all-purpose flour -¼ teaspoon ground cinnamon -1 tablespoon cornstarch -Nutella Equipment Needed: -Panini Press -2 inch circular cookie cutter Directions: -In the bowl of a stand mixer fitted with the whisk attachment, whip the heavy cream with the vanilla extract on medium-high speed until mousse-like, about 5 minutes. -Sift together the powdered sugar, flour, cinnamon and cornstarch in a seperate bowl then gently fold the dry mixture into the wet until it is fully incorporated. -Cover the bowl with plastic wrap and let it sit at room temperature for 30 minutes. -Heat the panini press to medium-high heat (or 375°) -Place a heaping tablespoon of batter in the center of the panini press, close the lid and cook the waffle for about 90 seconds. -Quickly remove the waffle from the press and use a circular 2-inch cookie cutter to cut out rounds. Set the waffle cone cookies aside to cool. -Once the waffle cone cookies have cool, spread one side of a cookie with nutella and top with a second waffle cone cookie to form sandwiches. S'mores Bars - These look good! S’more Than You Can Handle Posted by bakersroyale on August 30 2011 in Desserts, Featured, Recipe Sometimes life gets too busy for dessert. You’re playing defense, offense, triangulating with co-workers and family members to keep the things moving with forward momentum and with as little conflict as possible, right? By the time you finish up all this life-playing, you’ll probably have enough time to catch a syndicated Seinfeld episode before falling asleep. Wrong. You still have time for this s’mores bar recipe, which is super easy and pretty much fail-proof. The only difficulty comes with the wait period in which the chocolate needs to set. Oh, and Cocoa Pebbles is my secret ingredient to keep the chocolate portion from being too rich and give it a textural contrast. S’mores Bars * 2 cups graham crackers * 2 tablespoons sugar * 7 tablespoons butter melted. * 16 oz of dark chocolate (65% cacao), melted * 1 cup of whole milk * 2 cups of Cocoa Pebbles * 4 cups mini marshmallows, divided use Instructions: 1. Place graham crackers, sugar and melted butter in a bowl and mix to blend. Firmly press mixture into the bottom of an 11×13 pan and bake for 10-12 minutes at 350 degrees F. Set aside to cool. 2. Melt chocolate with milk in a pan over medium low heat and whisk to combine. Transfer mixture to a new bowl and set aside for 10 minutes to cool (transferring the mixture to a new bowl will help to cool it faster). 3. Add cocoa pebbles and 2 cups of marshmallows to cooled chocolate mixture and mix to combine. Pour mixture over crust. Pour remaining 2 cups mini marshmallows on top and place under the broiler for 2-3 minutes to toast tops of marshmallow layer. Transfer completed dessert to fridge and chill for at least 2-3 hours or overnight. A few notes: * You can of course skip the cocoa pebbles. But we liked the extra crisp in the chocolate bite. * Keep a careful eye when toasting the marshmallow portion in the broiler, as the 2-3 minutes can fluctuate depending on your broiler set up. We recommend you check it after the first minute. * For nice clean slices, wash or wipe knife off between cuts.

These Cucumber Feta Rolls are perfect for keeping Holiday entertaining simple. And they’re a snap to make when you use a Mandoline Slicer to slice up the cucumbers. I’ve never had or made Cucumber Rolls before making this recipe, but I loved the flavors of feta with kalamata olives and sundried tomatoes inside refreshing cucumbers. The filling is super quick to whip up, and could even be used as a dip to go with vegetables (think sliced cucumber rounds and bell pepper strips) and toasted pita chips. Cucumber Feta Rolls Yield: approximately 20 rolls Prep Time: 15 - 20 minutes Total Time: 15 - 20 minutes Print Save Recipe Ingredients: 2 cucumbers 6 ounces crumbled feta 3 tablespoons Greek yogurt 2 1/2 - 3 1/2 tablespoons finely diced sundried tomatoes or red bell pepper 8 - 12 pitted kalamata olives, roughly chopped 1 tablespoon roughly chopped dill or oregano 2 teaspoons lemon juice pinch of pepper, or to taste Directions: Thinly slice the cucumbers longways on a mandoline at a 2mm thick setting. Alternatively, you can use a vegetable peeler if you do not have a mandoline. Lay the cucumbers on top of a paper towel lined cutting board while you prepare the filling. Add the feta and yogurt to a medium bowl. Mash to combine using a fork. Add the bell pepper or sun dried tomatoes, olives, dill, lemon, and pepper to the bowl. Stir well to combine. In a bowl, mash the feta using a fork. Place 1 - 2 teaspoons of mixture at one end of a cucumber strip and roll up. Secure with a toothpick. Repeat with remaining strips. My daughters favorite. Use cream cheese 8 oz size instead of the sour cream. Double the recipe as These make excellent left over side dishes. Oven bake potatoes instead of microwave. The Ultimate Twice Baked Potatoes
Ultimate Twice Baked Potatoes 4 large baking potatoes 8 slices bacon 1 cup sour cream 1/4 to 1/2 cup milk 4 tablespoons butter 1/2 teaspoon salt 1/2 teaspoon pepper 1 cup shredded Cheddar cheese, divided 8 green onions, sliced, divided Preheat oven to 350 degrees. Bake potatoes in preheated oven for 1 hour. You can just microwave the potatoes instead because it is way faster and they taste just as good. About three minutes per potato, just check for tenderness. Make sure to poke holes in the potatoes with a fork before microwaving so that they don't explode. Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl leaving about 1/4 inch of flesh so the potato maintains it's shape; save skins. To the potato flesh add sour cream, butter, salt, pepper, 1/2 cup cheese, 1/2 the green onions, and milk (start adding 1/2 cup of milk but you may not need to add it all depending on the consistency you want. You don't want them too runny). Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon. Bake for another 15 minutes at 350 degrees.

Sausage Skewers: 1 clove garlic, smashed 1/4 teaspoon kosher salt 1/8 teaspoon crushed red pepper flakes 3 tablespoons extra-virgin olive oil 12 bocconcini (small mozzarella balls) 1 pint cherry or grape tomatoes 12 basil leaves, preferably large 12 toothpicks or short wooden skewers 2 -3 sausage links of your choice Combine the garlic, salt, pepper flakes, and olive oil in a medium glass bowl. Cover and microwave on high until the garlic is golden, about 2 minutes. Cool. Add the bocconcini and refrigerate for at least 1 and up to 24 hours. Pan fry sausages and allow to cool slightly. Slice sausages. Thread a tomato onto a skewer, wrap a bocconcini in a basil leaf and add to the skewer; finish with a sausage Repeat with the remaining cheese and tomatoes.

My husband said,"This is the best pasta dish you've made yet!" My small changes: I used the Costco bulk pasta I had on hand. Added a bit more sugar and some smoked sea salt to my caramelizing onions. Added fried bacon. Used herbed goat cheese. Served with grilled eggplant and grilled chicken. (And ate with some Chateau St. Michelle Riesling [not sweet] wine!) Enjoy!!!

100 Healthy Snack Ideas to help you reach your weight loss goals... 1. Frozen Grapes (I used to eat these in college all the time- they are amazing) 2. String Cheese 3. Banana 4. Frozen Banana (peel it first, stick in the freezer overnight- it's like a yummy popsicle) 5. Low-fat Yogurt 6. Sugar-free or fat-free pudding 7. Apple dipped in Peanut Butter (or spread peanut butter on top of apple slice and top with pecans . . . so good!) 8. 100-calorie bag of popcorn 9. Applesauce 10. Raw veggies with hummus (my new favorite!) 11. Almonds 12. Apple 13. Skinny S'more (two graham crackers with one roasted marshmallow and one small square dark chocolate) 14. Smoked Beef Jerky (about 1 oz- look for low-sodium!) 15. Chocolate Milk 16. Hard Boiled Egg 17. Sunflower Seeds 18. Cottage Cheese 19. Sliced Cantelope 20. Raisins 21. Pita Bread and Hummus 22. Rice Cakes 23. Sugar-free Jello 24. Dried Fruits 25. Frozen Yoplait Whips Yogurt (these seriously taste like ice cream when they are frozen!) 26. Air-Popped Popcorn 27. Pistachios 28. Six Sisters' Stuff: Twice Baked Potato Casserole, V-Day dinner. I combined this and other twice baked potato casserole dish I have pinned. I used cream cheese, butter, sour cream bacon, green onions, cheese and milk. Salt and pepper to taste and then topped w/ cheese and bacon and baked. Put more green onions on it after it got out of the oven. Delicious!
