Easy One Pot Lasagna Soup. The amount of meat is pretty skimpy on this. I used sausage to up the flavor. I used campenlle. (Belle) shaped pasta instead of lasagna noodle. The flavor is pretty mild. Needs more to it. I did add the noodles already cooked so maybe that affected it. I thought the broth to sauce ratio was off. I used a ricotta that I seasoned with parm, garlic and Italian spices. Tortellini Minestrone. I used 20 ounces of the eight and 32 ounces of chicken broth and stirred in a handful of chopped kale. I used frozen tortellini that I par.cooked ahead because the store only had fresh tortelloni which is too big. Bland. Not enough tomato flavor
Cajun Red Beans and Rice I used red pepper and celery seed only 3 cups of water. deglaze sauté pan with water for increased flavor. used smoke sausage. I thought this was good but my kids thought it was boring. Maybe some tomatoes?
Pumpkin Soup with Bacon Parmesan Crumbles, because I am stingy with my pumpkin I only used 1 can and then threw in 1/3 cup red lentils to thicken it up. didn't follow the bacon crumbles, went with bacon and parmesan sprinkled on top. reduced evap milk to 5 oz. + pumpkin seeds and some chipotle. Glad I went with one can of pumpkin because it was plenty rich
Masa Dumplings Chochoyotes 1 3/4 cups masa harina 3/4 teaspoon salt 2 tablespoons olive oil 1 cup really hot water. I made Half this amount and it still took up too much room in my pot. Technique is good and much easier than previous pinned dumpling. I would form smaller ( 1/2 teaspoon size). They take up a lot of room and need room. I really had to stay and watch to keep them from clumping and cooking together. + garlic and onion powder.
Chicken Soup with Masa Dumplings. I added onion and garlic powder and salt to the dough. It would have been really bland. I formed them into little hockey pucks for more even cooking. Not a huge dumpling fan, these were better than I expected and better than regular dumplings.
Mexican Soup. This soup was way too bland. I doubled the spices and used a medium salsa. two cans of refried beans is too much. I stopped at one and then had to add double the broth to get it to loosen up. I didn't like the texture if the refried beans

Potato Soup from left over mashed potatoes. I used the left over mashed potatoes from the unsuccessful slow cooker recipe I tried. there were a ton. good as a starter but bland and boring on it's own. I added a ton of chopped ham, roasted corn, fresh pepper & thyme. I went with 5 cups of Yukon mashed potatoes that already had a ton of butter and milk so I didn't add more milk. Served with sharp cheddar. This came out to be a good hearty chowder after I changed it. No way this can serve 7
Black Bean Chili with Butternut Squash Recipe - Bon Appétit. this is a great vegetarian chili. the bulgur gives it a great texture. but I had to add chicken broth in order for there to be any fluid for the bulgur to cook in. + cumin

Pork Chili Verde. I cooked cubed pork in the onions, seasonings, salsa (Arriba brand ) and broth. added a pound of freshly cooked dried navy beans. I don't like a soupy verde so I used 6 cups of broth. + 7 oz green chili.
Texas Cowboy soup with cornbread croutons. Only used one can of diced tomatoes and 7 oz green chilies. Reduced broth to 2 cans to make it more chunky and less soupy. Pinch of oregano. This is pretty bland and the corn bread croutons are too porous and instantly fell apart in the soup.
Chipotle Pinto Beans. I added 3 ham hocks, bay leaf, sauteed onion, carrot and celery. cooked the beans in broth for better flavor. Fire roasted canned tomatoes have better flavor than fresh.
Easy Drunken Beans. 1 lb pinto, beer, roasted tomatoes, 1 cup crumbled bacon, McCormick Chipotle packet. Quick cook beans in H2O, 2 min. (directions on bag) soak 1 hour. drain. add ingredients (except tomato) & H2O to cover. bring to boil, then cook on medium, covered for 1 hour, then add tomatoes.(tomatoes interfere with softening of beans. 15 Bean Cajun. I used regular pinto (don't like some of the beans in 15 bean) and added 1 1/1 tablespoons creole seasoning. Smoked pheasant instead of turkey. roasted tomatoes. only enough liquid to cover. didn't want it too soupy

Brown Bean Chowder Allrecipes.com. This was interesting to try. The chili thickens by adding bread. Pretty basic recipe and basic flavor. I like to use masa instead.
Taco Chili. I used a can of chili beans instead of just black beans and roasted red pepper instead of green. Ground turkey. + green chilis. I had to add a lot more taco seasoning to this.
Corn and Green Chili soup. This required quite a bit of doctoring. I actually charred the corn in a cast iron to up the flavor. still tasteless. threw in cumin, garlic and more green chilis (7 oz) total. despite the milk ( I used evaporated for more flavor) still had no body to it. I didn't bother to blend it and dumped in 2 cans broth and thickened it with masa.
