Gingery Red Lentils & Rice from @Jenna (Eat, Live, Run). Finally made this and it was SO good. Used onions, butternut squash, and red pepper for the veggies and subbed quinoa for rice, but besides that I followed the recipe. Delicious and healthy.
Gingery Red Lentils & Rice serves 2-4 Print this recipe! Ingredients: 1.5 tbsp olive oil 1/2 yellow onion, minced 2 carrots, peeled and chopped 1 stalk celery, chopped 2 cloves garlic, minced 1 tbsp fresh grated ginger 1 jalapeno, seeded and minced juice and zest of one lemon 1 1/4 cup red lentils ~3 cups water (more of less depending on desired consistency) 1 tsp salt white or brown rice, cooked Directions: Heat the olive oil over medium high heat and add the onions. Saute for about eight minutes, until tender and beginning to caramelize. Then, add garlic, carrots, celery, ginger, lemon zest and jalapeno. Saute for another six minutes, until veggies just start to soften and become tender. Add lentils, water and salt and bring to a boil. Reduce heat and simmer for 20-25 minutes until lentils are tender and thick. Stir in the lemon juice. You might need to add a little more water at the end. Serve lentils over rice. Time: 45 minutes

Chicken Lazone...An AMAZING chicken recipe!!! This recipe uses many items you most likely already have on hand. The only change I make for this recipe is that I cut the uncooked chicken in to 2" pieces, instead of leaving the breasts whole, in order to achieve even cooking. The chicken is coated with a 'rub' consisting of chili powder, onion powder, garlic powder, and salt. It is then sauteed in butter; cream is added, and then a bit more butter. Yes, I know, it's completely unhealthy...but it's so unbelievably delicious!!

Chicken Lazone - 1 tsp. salt 1.5 tsp. chili powder 1.5 tsp. onion powder 2 tsp. garlic powder 4 boneless, skinless chicken breast halves (cut in 2" pieces for more even cooking) 1/4 c. butter 1/2 c. heavy cream Mix seasonings & coat chicken. In skillet over medium heat, melt 1/2 the butter & cook chicken 7-8 minutes, turning once. Add cream & lower heat. Simmer several minutes, 'til thickens. Add remaining butter.

Chicken Broccoli supreme- Here I go again, posting this recipe for the second time. As you have probably figured out by now, I deleted my baking blog, and recovered everything except for the last two posts that I had made. This is really, honestly my favorite casserole type chicken dish. I probably could eat it every night! There are a lot of varieties of this recipe out there, but you have to try making this one with homemade sauce, and not canned soup. It makes a huge difference in taste quality. When I posted this previously, one of my sweet commentors asked if they could leave out the poppyseeds. Sure you can . . . they simply add subtle taste, and make the crumbs looks a bit prettier. You could substitute another veggie for the Broccoli, if you turn your nose up at Broccoli. In fact, you could substitute ham for the chicken, and that would also be tasty. I also want you to know that this re-heats quite well. If you have leftovers, simply re-heat in the microwave until it is hot and bubbly again. Then turn on your broiler, and toast those yummy crumbs until they are crisp again. Really good! Print This Print This FRENCH CHICKEN BROCOLLI SUPREME Ingredients: 1 – lb. fresh broccoli Break in pieces, and steam for 2 minutes. 3 cups cooked chicken breasts – Break up in small pieces 3 cups Grated Cheddar Cheese divided 2 tubes Ritz Crackers 1 stick melted butter 1 tablespoon poppy seeds SAUCE: 1/3 cup Butter- melted 1/4 cups Cornstarch, dissolved in 1/2 cup COLD Water 1/3 cup Chicken Broth 1/4 tsp. Salt 1/4 tsp Pepper 2 Cups Milk 1 1/2 cups of the above Cheddar Cheese Directions: In greased 13×9 pan, layer the broccoli and chicken, then set aside. In saucepan over medium heat, combine the melted butter, cornstarch dissolved in water, chicken broth, seasonings, and milk. Stir well, and continue stirring until sauce has thickened. Turn heat down to low, and add 1- 1/2 cups grated cheddar cheese. Stir until melted. Pour over the chicken and broccoli. Top with 1- 1/2 cups grated cheddar cheese. Melt the butter, and add the poppy seeds, and stir well. Crush Ritz crackers in large zip-lock bag with a rolling pin. Don’t crush too small. Add crumbs to the melted butter. Sprinkle crumbs over the top of the grated cheese. Bake uncovered at 350 degrees for about 30 minutes, or until hot & bubbly. Eat and enjoy!

The sauce is made up of butter, cornstarch, chicken broth, milk, and cheese. Not only is this dish great the first night, but its leftovers heat up well too.

Baked Penne with Spinach, Roasted Peppers and Bacon Yield: 8 to 10 servings Prep Time: 25 min Cook Time: 35 min Ingredients: SAUCE: 16 ounce container of Pacific Natural Foods Roasted Red Pepper & Tomato Soup 2 cups 2% milk 4 Tablespoons butter 1/4 cup all-purpose flour freshly ground pepper, to taste PASTA: 1 pound penne pasta (or ziti), cooked until tender, but still firm to the bite 1 package frozen chopped spinach, thawed & squeezed dry 3/4 cup chopped jarred roasted red peppers 1 1/2 cups cubed Provolone cheese 8 slices of cooked bacon, crumbled 1 1/2 cups shredded Parmesan cheese, divided Freshly ground black pepper kosher salt Directions: 1. Preheat oven to 350 degrees F. Spray 9x13-inch pan (or other 2 1/2-quart baking dish) with nonstick spray. 2. Prepare sauce: Heat soup and milk in a medium saucepan until small bubbles begin to form around the edges (just until hot). In a larger saucepan, melt butter over medium-low heat. Add flour and stir well. Continue to cook, stirring, until thick and smooth, about 2 minutes. Slowly begin adding hot soup/milk mixture to the large saucepan, whisking constantly while adding. Sauce will start out lumpy and become smooth as the liquid is incorporated. 3. Assemble the dish: In a large bowl, toss cooked pasta with the sauce. Break apart the spinach with your fingers and add it to the bowl. Also add red peppers, provolone cheese and 3/4 cup of Parmesan. Stir until ingredients are evenly distributed. Pour the mixture into the prepared dish. Sprinkle with bacon crumbles and top with remaining Parmesan cheese. Finish with a good dose of freshly ground black pepper and a sprinkle of kosher salt. 4. Cover with aluminum foil. Bake 25 minutes. Uncover and bake until sauce is bubbling around the edges and the center is hot (about 10 minutes more). Remove from the oven and let cool for about 10 minutes before serving.

Stove top Christmas scent! One batch stays good for weeks, you just add water and heat it on low whenever you want it (WILL BE MAKING THIS CHRISTMAS!) Holiday Stove Top Potpourri Mix one whole orange or just the orange peel 1/2 cup cranberries 1 Tbsp. whole cloves 3 sticks of cinnamon or a small handful of small pieces of cinnamon a bit of grated nutmeg if desired Quarter the orange. Put all the ingredients into a saucepan. Fill pan with water. Place on the stove on the smallest burner, on the lowest setting. Refill water as needed. It’s just that easy. I love to use an orange that is starting to get old… or just use the peel of an orange. Another important tip is don’t allow the water to completely evaporate. I always refill the water when I turn it on. One mix stays good for weeks. With heating the mix does turn brown, but continues to smell wonderful, so I usually make only batch in a season. It’s not the Holidays without the delicious scent… it makes me think of cranberry sauce or wassail. Yum.

Tortellini Spinach Bake In Creamy Lemon Sauce - 12oz bag Cheese & Spinach Tortellini • 4oz bacon or pancetta, (about 4 strips bacon, turkey bacon?) • 3 cloves garlic, finely minced • 2 Tbs flour • 2 C milk • ¾ tsp kosher salt • ⅛ tsp black pepper • 1 1/2 tsp dry basil • ¼ tsp red pepper flakes • 1 medium lemon • 2 C loosely packed fresh spinach, roughly chopped • ¾ C grated mozzarella cheese, divided • ¾ C grated Parmesan cheese, divided - Preheat oven to 350 degrees. Fill pot with water and bring to boil. Add tortellini and cook. Place bacon in skillet on stove-top at medium-high heat. Cook until crisp. Remove bacon and set on paper towels to drain. Reserve two tablespoons bacon drippings in pan and discard rest. Add garlic to pan and cook until fragrant and tender, about 1 minute. Add flour to pan and stir with whisk about 1 minute. Slowly add milk and continue to stir with whisk until smooth. Add salt, pepper, basil and red pepper flakes and bring sauce to a simmer. While sauce is heating, zest lemon. Then cut lemon in half and remove juice. Add 2 teaspoons zest and 1 tablespoon lemon juice to sauce. Continue to stir until thickened, 2-3 minutes. Remove from heat. Drain tortellini and place back in pot. Reserve 1 tablespoon of cooked bacon and add the rest to pasta mixture. Add spinach, 1/2 cup mozzarella and 1/2 cup Parmesan. Add sauce and gently stir to combine. Place pasta mixture in 8×8 or 9×9 baking dish and top with remaining 1/4 cup mozzarella and 1/4 cup parmesan and also crumbled bacon. Cover pan (with foil) and bake 20 minutes. Remove foil and bake an additional 5-10 minutes, until cheese on top is melted and pasta is bubbly throughout. Remove from oven and cool 10 minutes before serving.

Fill a large stock pot with water and bring to a boil. Add tortellini and cook according to package instructions. Place bacon in a medium sized skillet on the stove-top at medium-high heat. Cook until crisp. Remove bacon from pan with slotted spoon and set on paper towels to drain. Reserve two tablespoons bacon drippings in pan and discard the rest. Add garlic to pan and cook until fragrant and tender, about 1 minute. Add flour to pan and stir with a whisk for about 1 minute. Slowly add milk and continue to stir with whisk until smooth. Add salt, pepper, basil, and red pepper flakes and bring sauce to a simmer. While sauce is heating, use a microplane grater or a fine-holed cheese grater to zest lemon. Then cut lemon in half and remove juice. Add 2 teaspoons zest and 1 tablespoon lemon juice to sauce. (Note: I really love lemon so I added this to my tastes. If you don’t want as strong of a lemon flavor, I suggest cutting it down to 1 teaspoon zest and 2 teaspoons lemon juice) . Continue to stir until thickened, 2-3 minutes. Remove from heat. Drain tortellini and place back in stock pot. Reserve 1 tablespoon of the cooked bacon and add the rest to the pasta mixture. Add spinach, 1/2 cup mozzarella cheese and 1/2 cup Parmesan cheese. Add sauce and gently stir to combine. Place pasta mixture in an 8×8 or 9×9 baking dish and top with remaining 1/4 cup mozarella and 1/4 cup parmesan and also crumbled bacon. Cover pan with foil and bake for 20 minutes. Remove foil and bake for an additional 5-10 minutes, until cheese on top is melted and pasta is bubbly throughout.
