Cheddar Bacon Ranch Dip - I got so many compliments on this - and it is terribly easy. 16 oz. Sour Cream, 1 cup of cheddar cheese, 1 packet of ranch dressing mix and 3 oz of bacon bits (from a bag, not a jar). Mix & refrigerate for 24 hours. Serve with crackers, pretzels or veggies.

Chicken Quinoa Soup. Heat 2 teaspoons canola oil in a pot, cook 1 diced onion and 2 sliced carrots for 6 minutes. Add 1 pound thinly sliced boneless chicken thighs, 1 cup sliced mushrooms, 2 sliced celery stalks, 2 minced garlic cloves; cook 5 minutes. Add 4 cups chicken broth, 1 cup water, 3/4 cup quinoa, 4 sprigs thyme, and salt and pepper. Boil, reduce heat, and simmer about 15 minutes until quinoa is tender. Top with parsley and hot sauce.
