Christmas party treats! Made these for the cookie contest. The fluff "melts" and collects in the middle of the plate though. The sugar cookie recipe included wasn't very good.
ahhh I'm melting!!!! 12/5/10Melted Snowman Cookies I saw a picture of these the other day on Allrecipes.com and thought it was such a cute idea, I had to try it. After googleing it, I found a good tutorial on Stacy's Sweet Shop. I modified a few things to make it more simple for me (less homemade more store bought). To see the original Melted Snowman Cookie, and meet the inventor herself, go check out Meaghan (great name) @ The Decorated Cookie! Here's what I used: •1 package Betty Crocker Sugar Cookie Mix •10 large marshmallows •Betty Crocker Cookie Icing (white and orange) •Wilton Decorating Icing Tubes in Black, Red, Green, Blue and Pink ***it would have been a lot cheaper if I had just made the icing myself, see Stacy's tutorial for a good recipe)*** Here's what I did: •Mix cookie mix according to directions, or prepare your favorite cut out sugar cookie recipe, then just grab a golf ball sized chunk and squish it down until it's about 1/4-1/2 inch thick. Do not worry about the shape or how lumpy it is, the more misshapen the better! Bake according to recipe directions. •Once the cookies are cool, load them up with the cookie icing and spread it around with the back of a spoon, let some dribble over the edge for a "puddle" look. •Spray a microwave safe plate with cooking spray, and place marshmallows on the plate. Set the microwave for 30 seconds, but watch the marshmallows as they cook. Stop the microwave as soon as the marshmallows start to get puffy, do not let them double in size. •Spray your fingers with cooking spray or grease them up with shortening, and carefully pull the marshmallows off, by the base, and set them on top of the frosted cookies. •Then just decorate as you'd like with the Wilton frosting, or your own homemade frosting! I was pleasantly surprised at how yummy the Betty Crocker cookie icing was!
Reindeer cookies. Use regular peanut butter or gingersnap cookies. Remove from oven and immediately and gently press two chocolate covered mini pretzels into the tops of the cookies for the reindeer's antlers. Press two mini brown M & Ms in for the eyes and one red M & M for the nose. Allow to cool completely.

Easy fried rice, better than takeout! Baked Sweet and Sour Chicken with Fried Rice ﻿I have another DELICIOUS recipe for you all! I am so excited to share this one.. I found this on Mels Kitchen Cafe about a year ago. My family and I LOVE this dish! It has such a great flavor. You could probably trick your family into thinking you picked up some yummy Chinese food at a gourmet restaurant... It is that good, I promise! One of the great things about it is that its baked :) Your not deep frying it like the normal chinese dishes, so your getting tons of great flavor without all the fat and grease. I found the Fried Rice recipe on a website but added my own little twist to it. I made this last night for dinner and I think we all ate it up within 5 - 10 minutes! It's soooo good. I hope you give it a try soon :) Baked Sweet and Sour Chicken The chicken coating: 3-4 boneless chicken breasts salt + pepper 1 cup cornstarch 2 eggs, beaten 1/4 cup canola oil The sweet and sour sauce: 3/4 cup sugar 4 tbs ketchup 1/2 cup vinegar 1 tbs soy sauce 1 tsp garlic salt Start by preheating your oven to 325 degrees. Rinse your chicken breasts in water and then cut into cubes. Season with salt and pepper to taste. Dip chicken into the cornstarch to coat then dip into the eggs. Heat your 1/4 cup oil in a large skillet and cook your chicken until browned but not cooked through. Place the chicken in a 9x13 greased baking dish. Mix all of your sweet and sour sauce ingredients in a bowl with a whisk and then pour evenly over the chicken. Bake for one hour and during the baking process you will need to turn the chicken every 15 minutes. Below is the greatness you will get when it's all cooked: YUM! Chili's Copycat Salsa Recipe: (Recipe from Deals to Meals) 2 cans (14.5 oz each) whole tomatoes, drained 1 small (4 oz) can diced or whole jalapenos (not pickled)--about 4-5 jalapenos (or less if you don't like a lot of spice) 1/4 c. yellow onion, cut into quarters (you can also use dried minced onion) 1 tsp. garlic salt 1/2 to 1 tsp. salt (depending on how much you prefer) 1 tsp. cumin 1/2 tsp. sugar 1 tsp. lime juice Place all of the ingredients together into a food processor or blender and puree until smooth. Serve with tortilla chips.
