Yoga Journal - Quinoa, Red Pepper, and Cucumber Salad With Avocado and Lime Kosher salt 1 cup quinoa 1 garlic clove, pounded to a smooth paste with a pinch of salt 1 large shallot, finely diced 1 jalapeño, seeded and finely diced 3 and 1/2 tablespoons fresh-squeezed lime juice, plus more as needed 1/2 cup and 2 tablespoons extra-virgin olive oil 1 medium red pepper, halved, seeded, and finely diced 1 small- to medium-sized cucumber, peeled and seeded, if necessary, and cut into 1/4-inch dice (about 1 cup) 1/2 cup roughly chopped fresh cilantro, plus sprigs for garnish 2 to 3 ripe avocados, sliced Directions 1. Bring a large pot of water to a boil and season generously with salt. Rinse quinoa under cool running water, lightly rubbing it between your fingers for a few seconds. Add it to the boiling water and cook until tender, 12 to 15 minutes. Drain the quinoa well and spread out on a baking sheet to cool. 2. Put the garlic, shallot, jalapeño, and lime juice in a small bowl. Season with salt and stir to combine. Let sit for 5 to 10 minutes. Add 1/2 cup of the oil and whisk to combine. Taste; add more salt or lime, if necessary. 3. Put quinoa, red pepper, cucumber, and chopped cilantro in a medium bowl. Drizzle about half the vinaigrette into the bowl and gently fold to combine. Taste; add more salt, vinaigrette, or lime juice, if needed. 4. Arrange the sliced avocado on a platter or individual serving plates. Season the avocado with salt and drizzle the remaining vinaigrette on top. Spoon the quinoa salad on and around the avocado. Garnish with cilantro, and serve immediately.

Quinoa veggie "fried rice" (okay, so i made this. it was really tasty, great flavors. the only thing to watch out for is to make sure your quinoa is not too moist. otherwise your fried quinoa ends up being a mush of fried quinoa. still tasty, just weird texture.)

They're called zucchini bites. They are the healthy version of tater tots. The recipe for these couldn't be any easier. The original name for these was Zucchini Bites, which was okay. But when these were baking, they smelled just like tater tots. I changed up the recipe a little (by using seasoned bread crumbs,parm. cheese, & I drained the zucchini) so I decided to change the name too and called them "Zucchini Tots instead.And "tots" does mean small and these are small (baked in a mini muffin pan) so the name fits. Zucchini Bites Recipe adapted: The Naptime Chef yields: 12 mini muffins 1 cups zucchini, grated 1 egg (1 large egg equals 3-4 tbsp when whisked together) 1/4 yellow onion, diced 1/4 cup cheese (cheddar or Parmesan work the best) 1/4 cup bread crumbs - I used Italian style Salt and Pepper 1. Preheat oven to 400F. Spray a mini-muffin tin with non-stick spray, set aside. 2. Grate the zucchini and then place in a dish towel to squeeze out the excess water- like when using frozen spinach; if you skip this part, the middle of the zucchini tots will be really soggy while the outside gets crispy and no one wants that. 3. In a bowl combine, the egg, onion, cheese, bread crumbs, zucchini, salt and pepper. 4. Using a spoon or a cookie scoop, fill the muffin cups to the top. Bake for 15-18 minutes, or until the top is browned and set.

Boneless chicken rolls ingredients 1 tablespoon chopped green onion 1 tablespoon snipped fresh parsley 1 clove garlic, minced 1/2 of a 1/4-pound stick of butter, chilled 1 egg, beaten 1 tablespoon water 1/4 cup all-purpose flour 1/2 cup fine dry bread crumbs 4 skinless, boneless chicken breast halves Salt and black pepper 1 tablespoon butter 1 tablespoon cooking oil directions 1. In a small bowl combine green onion, parsley, and garlic; set aside. Cut chilled butter into four 2-1/2x1/2-inch sticks. In a shallow bowl stir together egg and water. Place flour in another shallow bowl. Place bread crumbs in a third shallow bowl. Set aside. 2. Place a chicken breast half between 2 pieces of plastic wrap. Using the flat side of a meat mallet pound chicken lightly into a rectangle about 1/8 inch thick. Remove plastic wrap. Sprinkle with salt and pepper. Sprinkle with one-fourth of the green onion mixture. Place a butter piece in center of chicken piece. Fold in sides; roll up. Repeat with remaining chicken. 3. Coat chicken rolls with flour. Dip in egg mixture; coat with bread crumbs. Dip in egg mixture again; coat with with additional bread crumbs. (Coat ends well to seal in the butter.) Place coated chicken in 2-quart rectangular baking dish. Cover and chill for 1 to 24 hours. 4. In a large skillet melt the 1 tablespoon butter over medium-high heat; add oil. Add chilled chicken rolls. Cook about 5 minutes or until golden brown, turning to brown all sides. Place rolls in a 2-quart rectangular baking dish. Bake, uncovered, in a 400 degree F oven for 15 to 18 minutes or until chicken is no longer pink (170 degrees F). Spoon any drippings over rolls. Makes 4 servings. Cheesy Chicken Rolls Prepare as at DIRECTION, except substitute 2 1/2x1/2-inch sticks of caraway, blue, Gruyere, or cheddar cheese for the butter. If using caraway or blue cheese, omit the parsley. If using Gruyere cheese, substitute 2 teaspoons snipped fresh tarragon for the parsley. If using cheddar cheese, substitute 2 teaspoons snipped fresh thyme for the parsley.
