crockpot macaroni and cheese 1 1/2 cups milk One 12 oz can evaporated milk (I used skim, evaporated milk keeps the egg and milk from curdling) 1/4 cup (1/2 stick) unsalted butter, melted, cooled to room temp 3 large eggs 1/2 tsp salt 3 cups (12 oz) shredded cheese (I used an Italian blend, recipe calls for Italian fontina cheese) 1/2 pound elbow macaroni or mini penne tubes, par cooked and drained (this means cook them for about five minutes until tender but not completely cooked) Freshly ground black pepper to taste 1/2 cup grated Parmesan cheese Spray the inside of your slow-cooker with cooking spray or grease it with olive oil. Combine milk, evaporated milk, eggs, butter, and salt in slow-cooker and whisk until until smooth (or you can use an immersion blender to do the whisking for you). Add the shredded cheese (not the Parmesan) and macaroni, sprinkle with black pepper (and whatever other spices you want to use). Stir gently with a spatula to coat evenly. Home About me... And my second official Magazine/Cookbook day! awhoohoo! This week I wanted something easy because I was focusing on cupcake making.... more on that later ☺... So I picked a recipe from a cookbook that I have had for awhile but have actually never used, "Not Your Mother's Slow Cooker Recipes for Two" by Beth Hensperger. It has lots of yummy ideas for crockpot recipes. I selected a mac and cheese recipe because my fridge runneth over with cheese right now. The recipe calls for shredded Italian fontina cheese, I had left over shredded Italian four cheese blend which I figured would work just as well so I subbed it in the recipe. My total prep time was about ten minutes and that included precooking the macaroni noodles. Not bad! The mac and cheese cooks relatively fast compared to most slow-cooker recipes, it was completely done in about two and a half hours. As far as taste goes, it was probably about an 8 out of 10. I think that if I had used the fontina cheese it would have been more flavorful. I also added in some spices as the recipe only calls for ground black pepper, I put in some oregano, and a sprinkle of chili powder. I wish I had some fresh oregano to sprinkle on because that would've been amazing! Maybe mix in some chopped baby tomatoes too... Next time! And there will be a next time because all in all this was a good basic mac and cheese recipe and so easy to throw together. So yes, 8 out of 10 and it's a keeper. What did you cook today? Balsamic Glazed Steak Wraps
Balsamic Glazed Steak Rolls Ingredients: (makes 8-10 rolls) * 1 1/2 – 2 lb skirt steak/ 8-10 thin sliced sirloin * Salt & Pepper (according to taste) * 3 tbsp Worcestershire sauce * Any steak seasoning you like * 1 tbsp olive oil For the Veggie filling - * 1 carrot * 1 bell pepper * 1/2 a zucchini (depending on size) * 5-6 green onions * 2 cloves of garlic * 1 tsp italian herb seasoning For the Balsamic glaze sauce- * 2 tsp butter * 2 tbsp finely chopped shallots * 1/4 cup balsamic vinegar * 2 tbsp brown sugar * 1/4 cup beef broth Method: - Start by prepping the steak. (I used skirt steak cos it’s what I had on hand, but in hind sight, I probably would have gone for a more leaner cut like flank steak or looked for thin sliced sirloin.) I trimmed as much fat as I could and cut the steak into 3 inch wide strips. I managed 8 strips and used the odd shapped ends to taste test my marinade and balsamic glaze. You can then tenderize the meat with a meat hammer (if you’re using sirloin it doesn’t need any tenderizing). - Season the steak pieces generously on both sides with salt, pepper and worcestershire sauce. And let them sit in the marinade for atleast 30 mins if not a couple hours. - While the steak is marinating you can prep the filling for them. Chop up the carrot, bell pepper and zucchini into matchstick size pieces, little longer than the width of the steak strips. I used a mandolin slicer to jet thin sliced and hand cut them to make matchsticks. I then cut the green onion in a similar size and sliced them in half length wise. For the garlic, simply peel and crush the cloves with the flat side of your knife, just enough to bruise them. - Now for the sauce, melt the butter in a small sauce pan on medium heat. - Add the finely chopped shallot and sautee it for a minute or 2 until they turn soft and transluscent. - Add the balsamic vinegar, brown sugar and beef stock and stir to mix everything well. - Allow the sauce to come to a boil and reduce to almost half its volume. You’ll notice it starts becoming thicker and have the consistency of syrup. The butter also starts separating and comes to the top. Turn the heat off and transfer the sauce to a bowl. - In the same pan (no need to wash it) add a touch of olive oil and toss in the garlic cloves to allow them to flavor the oil for a few minutes. - Turn the heat up to high and toss in the carrots, bell pepper and zucchini (there’s no need to cook the green onion) and stir fry the veggies for no longer than 2-3 minutes. - Season them with the the itlalian herb seasoning and salt and transfer the veggies to a bowl. - To assemble the steak rolls, simply take a strip of the marinated steak and lay it with the short side towards you. Place the veggies (dont forget the green onion!) in the middle and oll the beef up over the filling, securing it with toothpick. Repeat the same with the other rolls. - Heat a large skillet over medium-high heat. Add a touch of oil swirling to coat bottom. When hot, add beef rolls, seam side down, not touching and pan fry for a couple minutes. Then turn roll and cook it on all sides in the same way. Cook until you’re desired done-ness. I cooked mine medium well and seasoned it with some mesquite seasoning for a touch of a smokey flavor. - Remove the toothpick and serve with the balsamic glaze sauce spooned over the top of each roll.

Once turkey is cooked, add chopped green onions (4) and chopped water chestnuts (8 oz can). Simmer with a little cilantro and serve with iceberg lettuce cups. *To keep lettuce crisp, cut core out, rinse with cold tap water, and drain over sink for 15 mins (it'll keep for 2 weeks).

Crock Pot Chicken Tacos: Place about 3 pounds of bonless skinless chicken breasts in the crockpot mixed with one 1oz packet of ranch seasoning mix and one 1oz packet of taco seasoning with one can of chicken broth and cooked on low for 3 hours. Shred chicken and serve with toppings. (or use for awesome chicken taco salad!)
Chicken Ranch Tacos Crock pot version: 2 lbs of raw (not frozen) chicken breast 1 packet of dry ranch dressing 1 packet chicken taco seasoning 1 can of chicken broth. Put that all in the crockpot. Cook on low for 3 hours then shred the chicken and let it cook on low another 30 min. Last 10 min of cooking, heat the taco shells and mixed diced tomatoes, a bag mix of salad, shredded cheddar cheese and a little bottled ranch together. Assemble your tacos.

Seared Scallops over Wilted Spinach and Parmesan Risotto Parmesan Risotto 1 cup arborio rice 2 tsp butter 1 shallot, minced 1/2 cup white wine 4 cups fat free chicken stock salt and pepper 1/4 cup grated parmesan cheese 2 tbsp chopped parsley Heat chicken stock in a small pot. In a medium size heavy sauce pan, add butter on medium-low heat. Add shallots, sauté about 1 minute. Add rice mixing well until well coated and transluscent, about 2 minutes. Add wine, salt and pepper and mix well until it is absorbed into the rice. Ladle 1 cup stock into rice and mix until all stock is absorbed, add another ladle, and continue adding and stirring until all broth is absorbed, about 20-25 minutes. Add parmesan cheese and parsley, mix well and serve. Seared Scallops over Wilted Spinach 16 oz (about 12-14) sea scallops salt and fresh pepper 2 tsp butter 1 tsp olive oil 1 shallot, minced 10 oz baby spinach, washed Wash scallops and pat dry with a paper towel. Season with salt and pepper. Heat a medium size pan on a high flame. When pan is hot, melt 1 tsp butter and place half of the scallops in the pan. Sear without touching them for a few minutes until the bottom forms a nice caramel colored crust. Turn over and cook about another minute or 2, until the center is slightly translucent (you can check this by viewing them from the side) and the bottom is seared. Be careful not to overcook. Remove from the pan and set aside on a warm plate. Add addition tsp butter and cook remaining scallops. Add olive oil to the pan and sauté shallots, add spinach, salt and pepper. Toss until spinach wilts. Serve over spinach over risotto topped with scallops.
