Rolo Cake Mix Bars. Yes, I have a problem with Rolo recipes, I can never have enough!
Rolo Cake Mix Bars Ingredients 1 box yellow, vanilla or white cake mix 1, 5 oz can evaporated milk 1/4 cup melted butter 40 Rolo Candies, unwrapped and cut in half How to Make Preheat oven to 350° Spray a 9x13 pan with cooking spray. With your mixer, beat cake mix, evaporated milk and butter until combined. Mixture will be thick and sticky. Divide batter in half and press 1 half into the bottom of the pan. Bake until just set, approximately 8-9 minutes. Remove base from oven and place Rolo candies, caramel-side down on top. Drop remaining batter on top of Rolos in teaspoon sized amounts. Bake for 20-24 minutes longer until top begins to golden. Cool completely before cutting into squares. Notes Recipe adapted from Taste of Home

Another recipe for Jen... EASY 3 Ingredient Nutella Brownie Bites: Preheat oven to 350 degrees F. Line a regular (not a mini) 12 cup muffin tin with paper liners. Mix together 2 eggs and 1 cup Nutella in a bowl until smooth. Add in 10 tb all-purpose flour & mix until just combined. Evenly spread into prepared muffin cups. Sprinkle each with a few chocolate chips (if desired). Bake 12 minutes.

Smores Cookie Bars Ingredients: 1/2 cup butter, room temperature 1/4 cup brown sugar 1/2 cup sugar 1 large egg 1 tsp vanilla extract 1 1/3 cups all purpose flour 3/4 cup graham cracker crumbs 1 tsp baking powder 1/4 tsp salt 2 king-sized milk chocolate bars (e.g. Hershey’s) 1 1/2 cups marshmallow creme/fluff (not melted marshmallows) Directions: Preheat oven to 350°F. Grease an 8-inch square baking pan. In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until combined. Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough. 2 king-sized Hershey’s bars should fit perfectly side by side, but break the chocolate (if necessary) to get it to fit in a single layer no more than 1/4 inch thick. Spread chocolate with marshmallow creme or fluff. Place remaining dough in a single layer on top of the fluff (most easily achieved by flattening the dough into small shingles and laying them together). Bake for 30 to 35 minutes, until lightly browned. Cool completely before cutting into bars.
S mores Cookie Bars
S'MORES BARS: Who says a cookie has to be round? These are probably on my list of top 3 things that I've EVER baked, believe it or not. They're just that good. I mean, s'mores are delicious as is.. but baking them into a cookie bar? Absolutely genius. They are the best when warm, because everything inside it is still gooey and you really get the whole campfire feeling. You can microwave these for about 10-15 seconds prior to eating them so you melt the chocolate & warm the marshmallow.

Brownie and cheesecake batter are swirled together to make a festive and impressive dessert. Indianapolis, along with many other states in the Midwest, is coping with a huge ice storm that is supposed to cover us in over an inch of ice. Unfortunately the worst of the storm is supposed to come tonight. Today the school district that I work for was actually closed! This is very surprising because we never close. Ok, hardly ever! We did close the day after the Colts won the Superbowl in 2007. There was too much celebrating here in the Circle City to have school the next day! Last night as I was eagerly watching the news, hoping for a snow day, when they finally called it-No School! :) With all this ice and wind coming our way, the chance of us losing electricity is very likely. So what does Sweet Pea need to survive the ice storm of 2011? Red velvet cheesecake brownies of course! ;) Red Velvet Cheesecake Brownies Printer Friendly Version Ingredients: 1/2 cup butter 2-oz dark chocolate, coarsely chopped 1 cup sugar 2 large eggs 1 tsp vanilla extract 1 1/2 tsp red food coloring 2/3 cup all purpose flour 1/4 tsp salt 8-oz cream cheese, room temperature 1/3 cup sugar 1 large egg 1/2 tsp vanilla extract Directions: Preheat oven to 350F. Butter the bottom and sides of a 8 inch metal baking pan. Put a long piece of parchment paper in the bottom of the pan, letting the parchment extend up two sides of the pan and overhang slightly on both ends. (This will make it easy to remove the bars from the pan after they have baked.) Butter the parchment. In a small, heatproof bowl, melt butter and chocolate together. Stir until combined and very smooth. Set aside to cool for a few minutes. In a large bowl, whisk together sugar, eggs, vanilla extract and red food coloring. Add chocolate mixture and stir until smooth. Add flour and salt and stir until just combined and no streaks of dry ingredients remain. Pour into prepared pan and spread into an even layer. To prepare cheesecake mixture, beat cream cheese, sugar, egg and vanilla extract in a medium bowl until smooth. Distribute the cheesecake mixture in 8 dollops over batter in the pan. Swirl in with a knife or spatula. Bake for 35-40 minutes, until brownies and cheesecake are set. A knife inserted into the cheesecake mixture should come out clean and the edges will be lightly browned. Let cool completely in pan on a cooling rack before lifting out the parchment paper to remove the brownies.

Mini Pineapple Upside Down Cakes Recipe Cake Ingredients: 2 eggs 2/3 C white sugar 4 Tbsp pineapple juice 2/3 C all purpose flour 1 tsp baking powder 1/4 tsp salt Topping: 1/4 cup butter (1/2 stick or 4 Tbsp) 2/3 C brown sugar 1-can pineapple rings 6-maraschino cherries Preheat oven to 350 degrees. Spray your muffin tins with non-stick cooking spray. BAKE TIME 10-15 min. In a mixing bowl, add eggs, white sugar, and pineapple juice. Beat for 2 minutes. In a separate bowl, sift together the flour, baking powder, and salt. Add to the wet ingredients and turn mixer back on for 2 minutes. In a small sauce pan, melt the butter and add the brown sugar. Stir on low heat for one minute. Spoon a layer of the warm brown sugar mixture into the bottom of each muffin tin then place a pineapple ring on top. Add a cherry in the middle of each pineapple. Pour cake mixture over to fill muffin tin 3/4 of the way full. If you are using regular muffin tins, you will need to cut down the rings to fit or just use pineapple tidbits
Mini pineapple upside down cakes! Pineapple slice, cherry, and cupcake batter 9/11/12 not 100% sure if i will make them again. they tasted GREAT but I am so used to regular pineapple upside cake. the downside to this is the brown sugar stayed in the pan mostly but the stuff that did come out dripped off.
Mini pineapple upside down cakes. okay so i did this but i didnt use the recipe just the concept. i used box pineapple cake mix and instead of water i sub'd the pineapple juice from the can of sliced pineapple i used. i did do a brown sugar and butter topping as said on blog. these were so super moist and everyone loved it. super easy.
