Ever since I first tried Melissa Clark’s quick and simple maraschino cherry recipe, I’ve been hooked. This delicious way of preserving seasonal fruit for year-round cocktails and desserts has become a cherished summer ritual for me. But this year, I thought I’d try something new.

Not actually gin -- gin is made using a more sophisticated process in which the botanicals are often distilled, not simply soaked in alcohol-- but this is a cool project nonetheless.  Don't let leafy green herbs soak in alcohol for more than 8-24 hours--they create off flavors over time--and only use culinary juniper (some wild species can be toxic.)
