Peach Crunch Cake - this gets 5 stars on flavor, fast, and delicious! This was fast and had a ton of flavor! Some people call these "dump" cakes, in that you just dump everything into a pan and then bake it. This calls for a yellow cake mix, and I did not realize that you really need to break up the "lumps" in the cake mix (not sift, but break them up completely) or you will end up with dry lumps that the moisture in the cake did not absorb. The only change I made to this recipe was that I added about 1 tsp of cinnamon to the brown sugar, which gave it an extra spicy flavor. 24.5 oz jar of sliced peaches in light syrup 1 package yellow cake mix 1 stick butter (1/2 cup), cut into 16 pieces 1 cup brown sugar 1/2 cup chopped walnuts Preheat oven to 350 degrees F. My Kitchen Escapades: Pork Carnitas This is probably the BEST Pinterest recipe so far! This meat is outstanding!!!
Pork Carnitas (recipe adapted from Cooks Illustrated) 4 pound boneless pork butt, fat trimmed and cut into 2 inch cubes 1 1/2 tsp salt, 3/4 tsp pepper, 1 tsp ground cumin, 1 onion, peeled and halved, 2 bay leaves, 1 tsp dried oregano, 2 Tb fresh lime juice, 2 C water, 1 medium orange, use juice & spent halves. Need large dutch oven, broiler and foil & about 4hrs. I used crock pot then broiler.
Pork Carnitas (originally from Cook's Illustrated)...Highly recomended. I do not care for mexican food much and this seemed very strange to me but this was very good and smelled wonderful cooking. Could be easily adapted to crock pot and could be used many ways. Very happy to find this recipe to use a cheap cut of meat in a new way.

In a large bowl, combine the cooked chicken, cream of chicken soup, frozen veggies, cheese, herbs and spices. Lightly grease a 12-cup muffin tin and place the Pillsbury biscuits into each cup, pressing into the bottom and up the sides. Evenly spoon the pot pie mixture into each biscuit cup. Slide into the oven and bake for about 15 minutes. Check at the 12 minute mark. Let rest for about 3 minutes ad dig in

There's gotta be a reason why it's called "Sex in a Pan". The bottom layer is the crust made with pecans and flour and butter, the next layer is a layer of cream cheese sweetened with powdered sugar and made fluffier with whipping cream. Then you have a layer of chocolate pudding, then another layer of vanilla pudding and top it off with whipping cream and sprinkled with chocolate. WOW!!!
One of my favorite all time veggie side dishes is roasted cauliflower. So YUMMY! I just thaw cauliflower and toss it in a bag with olive oil and minced garlic, shake around, then lay out in a pan and sprinkle with parmesan cheese. Cook high, like at 450 degrees or so, stirring off and on and adding more parmesan if you want. I just watch it until it gets brown. YUM!

Sun Dried Tomato Basil Cream Sauce + Chicken and Pasta 6 boneless, skinless chicken tenders, thawed 2 tablespoons extra virgin olive oil Fresh ground pepper, to taste 1 1/2 tablespoons butter 2 tablespoons flour 1/2 cup onions, chopped finely 2 cloves garlic, minced 1/2 shallot, minced 1/4 cup sun dried tomatoes, chopped (in package, NOT oil packed) 1/4 cup fresh basil, chopped 1 1/2 cups reduced sodium chicken broth 1/2 cup heavy whipping cream 1/4 16 ounce package whole wheat spaghetti, uncooked Heat olive oil in a large pan over medium-high heat. Add chicken & grind fresh pepper on each side. Cover & cook until done, about 5 minutes on each side. (When done, chicken will have NO pink on the inside.) Remove from heat and set aside, keeping covered. In a large saucepan, melt butter over medium heat. Add onion, garlic, & shallots, cooking 1-2 minutes, just until soft. Add sun dried tomatoes; stir. With a whisk in hand, add flour & stir. Slowly pour in chicken broth, whisking constantly to remove any lumps. Add cream, still whisking. Whisk that sucker to death! (just kidding). Continue whisking for 3-4 minutes or until sauce begins to thicken. Take off heat and let sit; it will continue to thicken, feel free to stir every so often as you cook the spaghetti: Cook spaghetti according to package directions. It is done when it is soft, but still has a bite; al dente please. Add fresh basil to sun dried tomato sauce and give it a good stir.
