I've posted the recipe to Kung Pao chicken meatballs a few times.. (Check my Pinterest! "imlosinggravity") It's one of my go to recipes! Tonight I decided to attempt a bit of a deconstructed version. Cooked extra lean ground chicken in a bit of sesame oil, sea salt, pepper and 2t garlic. Lunch: dole bacon and bleu chopped salad kit with some off-the-bone ham from the deli counter. This ham was on sale for $3/lb so I found a way to work it into my food plan. I promised I would share the recipe if I liked it. Well here it is! INGREDIENTS 4 English muffins 3.5oz Jimmy Dean sausage crumbles 2oz FF cheddar cheese 16oz liquid egg whites DIRECTIONS Cut up muffins into small bite size pieces and place in casserole dish. Add sausage, cheese, then eggs. Season with S&P. Bake at 350° for 25 minutes. Time will vary based on your oven. YIELDS 4 large servings at 5sp each. Supper last night+leftovers for lunch. Curry chicken, corn, brown rice. This has been my favourite homemade meal since I was little! Since I started this journey I haven't cut out my favourite meals, just have smaller portions than I used to/lighten them up a bit. For example, I used half of the amount of butter my mom's recipe calls for, and opted for brown rice.
