This board is mostly just for me to document my own meals that I've cooked. So whenever I'm stuck for what to have for dinner, I can look here! These are mostly the images I post to Instagram, collected here so they don't disappear into an Instagram black hole.
Thai sweet potato, spinach and tuna fishcakes. Containing absolutely no egg! Massaman curry paste and red onion, plus ingredients above. I cooked them in the oven, rather than frying, along with some sweet potato wedges. Served with kale salad.
Cheesy borlotti bean and vegetable stew, with leftover tortilla chip crumbs on top!
Brown rice risotto with beetroot, spinach, mushrooms and cherry tomatoes (+ red onion and garlic). I used some soft cheese to make it have a more typical creamy risotto consistency but probably would have been perfectly okay without any cheese – and therefore vegan. Topped with a few walnuts as well.
Leftover vegetable and bean chilli with goat's cheese in a quesadilla for a feast-of a-lunch. The chilli has sweet potato, red and green peppers, mushrooms, courgette and sweetcorn in it, plus black eyed beans and borlotti beans. Also homemade guacamole and tortilla chips. Delicious!
