This board is mostly just for me to document my own meals that I've cooked. So whenever I'm stuck for what to have for dinner, I can look here! These are mostly the images I post to Instagram, collected here so they don't disappear into an Instagram black hole.

Thai sweet potato, spinach and tuna fishcakes. Containing absolutely no egg! Massaman curry paste and red onion, plus ingredients above. I cooked them in the oven, rather than frying, along with some sweet potato wedges. Served with kale salad.

A kedgeree of sorts: smoked mackerel, red pepper, peas, spring onions. Using bulgar wheat instead of rice and lots of turmeric, of course.

Oven-baked Thai pollock. With roasted red onion, cherry tomatoes and mushrooms. And served with half mixed salad and half steamed kale.

Chunky vegetable Thai curry with avocado toast. Ingredients of the curry: red onion, sweet potato, carrot, red and green peppers and chickpeas. Not actually as vegetarian-friendly as it sounds as I used Massaman curry paste which contains fish. Coconut milk too, of course!

Filipino pork menudo is a tomato-based stew with pork belly, pork liver, potatoes, carrots and raisins. This is a slow cooker recipe for modern cooks.

Brown rice risotto with beetroot, spinach, mushrooms and cherry tomatoes (+ red onion and garlic). I used some soft cheese to make it have a more typical creamy risotto consistency but probably would have been perfectly okay without any cheese – and therefore vegan. Topped with a few walnuts as well.

Leftover vegetable and bean chilli with goat's cheese in a quesadilla for a feast-of a-lunch. The chilli has sweet potato, red and green peppers, mushrooms, courgette and sweetcorn in it, plus black eyed beans and borlotti beans. Also homemade guacamole and tortilla chips. Delicious!

Friday night is now falafel night! Sweet potato harissa falafel with spinach, carrot, avocado and goat's cheese (yep, probably a bit weird but I thought I'd try it!). All wrapped up in a tortilla wrap.
