Spinach Artichoke Chicken Recipe -- cut this recipe in half and used double the Greek yogurt instead of mayo. Also added some feta cheese we had on hand. Next time I will use the full amount of artichokes. Quick and easy!

Oops – slightly late with my April book update 😛 but don’t worry I finished it on time 😉 just been a little busy with a new project! The book for April was called: “Don’t Sweat The Small Stuff And It’s All Small Stuff” by Richard Carlson – this book was absolutely AMAZING, really simple concepts and a very easy read. It reminded me of many of the things the same author talked about in the first self-help book I ever read way back in 2003 – that book was the one thing which made me realise for the first time that I could actually do something about the shitting parts of my life – what I was wasn’t what I always had to be.
